Meatloaf with Stove Top Stuffing

We usually make Onion Soup Mix Meatloaf because it is so easy. There are times though when I have run out of Italian bread crumbs and need something else to use as the binder. Crushed croutons are another options if you have those but for more flavor I suggest boxed stuffing.

From there you can tweak the ingredients or the glaze on top to make into a Spicy Meatloaf Recipe too if you want some heat in there. This classic dish has a whole new look and add ins nowadays to make it beyond delicious with every bite.

Stove Top Stuffing Meatloaf Recipe

You could use another protein to make this like our Venison Meatloaf Recipe or half and half works great too. Sometimes I will combine half spicy ground sausage from Jimmy Dean to add a bit of heat and a bit more fat into the mix. The baking dish I use is a large loaf pan but if you had a small casserole dish it would work too.

Ingredient Notes

To make this it is going to be a bit larger than others maybe by using some lean 1.5-2 lbs. ground beef. You could use half ground sausage if you like, in this case I might use HOT Jimmy Dean to add a bit of heat.

Then instead of the boring breadcrumbs you are going to open up 1 box of stove top stuffing to use instead, so much more flavor in this case friends!

We are going to add ideally some whole (or at least 2% low fat) 1/2 c milk or dairy free alternative works too for a bit of moisture.

  • Onion diced is optional
  • Ketchup to add flavor in the meat
  • eggs to bind together
  • 1 tsp worchestershire sauce

Meatloaf Glaze

You can of course just add some bbq sauce right out of the jar but you can make your own with just 1/2 cup of ketchup, some brown sugar and a bit of dijon mustard

This Quick Easy Meatloaf glaze is a must to make. You just mix the ingredients up real quick and pour it on top to add lots of flavor. You could go with bottled bbq sauce too. It is a family favorite of ours. I will use sides that are on hand like mashed potatoes, vegetables roasted or a salad.

What is in Stovetop stuffing?

To make this yourself you are going to want to start out with about 8 cups of bread cubes (use day-old or slightly dried bread, such as white, whole wheat, or a combination). Then you will add the below items for a cheater copycat version.

  • 1/2 cup (1 stick) of unsalted butter
  • 1 large onion, finely chopped
  • 2-3 celery stalks, finely chopped
  • 2-3 cloves of garlic, minced (optional)
  • 2-3 cups of low-sodium chicken or vegetable broth
  • 1-2 teaspoons of poultry seasoning (adjust to taste)
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley, sage, thyme), chopped (optional)

How to Make Homemade Stovetop Stuffing

Prepare Bread Cubes – Cut the bread into small cubes and spread them out on a baking sheet. Allow them to air dry for a few hours or overnight to slightly stale the bread. Alternatively, you can toast the cubes in a 300°F (150°C) oven for about 15-20 minutes until they are slightly crisp like our Sourdough Croutons.

Sauté Vegetables in a large skillet or saucepan, melt the butter over medium heat. Add the finely chopped onion and celery. Sauté for 5-7 minutes, or until the vegetables become soft and translucent. If using garlic, add it in the last minute of sautéing.

Season Vegetables by stirring in the poultry seasoning, salt, and pepper. Adjust the seasoning to your taste preferences.

Combine Bread Cubes in a large mixing bowl with the sautéed vegetable mixture over the bread cubes and toss to combine.

    Feel free to customize with chopped apples, dried cranberries, chopped nuts, or cooked sausage too. Copycat stovetop stuffing is a versatile dish that can be adapted to suit your preferences.

    How to Make Stove Top Stuffing Meatloaf 2 Lbs

    Start this by always preheating your oven to 350°F and lightly grease a 9×5-inch loaf pan. In a large mixing bowl, combine the Stove Top Stuffing mix with the water and milk. Stir until the stuffing mix absorbs the liquid and becomes soft.

    Add the ground beef (or beef and pork mix), chopped onion, 1/2 cup ketchup, eggs, Worcestershire sauce, salt, and black pepper to the stuffing mixture. Mix everything together until well combined.

    Form the meat mixture into a loaf shape and place it in the prepared loaf pan. In a small bowl, mix together the ingredients for the glaze: 1/2 cup ketchup, brown sugar, and Dijon mustard. Spread this over the top.

    Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (71°C). Remove from the oven and let it rest for a few minutes before slicing. Serve slices with your favorite side dishes, such as mashed potatoes and green beans, fora comforting and delicious family dinner.

    1. This is a great recipe I’ve been making for a very long time. The only change I make to the original recipe is rather than using ketchup, I use barbecue sauce. I find it makes a better overall flavour than boring old ketchup.
      This is an extremely moist, flavourful recipe that tastes amazing time after time.
