These bite size savory appetizers or snacks are made from a mixture of ground sausage, cheese, and a dry binder such as baking mix. Rolled into bite-sized balls and baked until golden and cooked through, these are popular for parties, potlucks, and holiday gatherings. Easy to prepare, most will serve with dip(s).

What can you use instead of Bisquick in sausage balls?

We found an alternative here. You can use any sort of biscuit mix really in it’s place but some are better than others. Jiffy baking mix is another choice but not as moist as others. In this case we used boxed cheddar bay biscuit mix that has the most flavor of them all.

Ingredients

  • 1 box Red Lobster Cheddar Bay Biscuit Mix
  • Butter or dairy free plant based alternative
  • Cheese, shredded, sharp cheddar cheese is our fave
  • Ground sausage, spicy or regular Jimmy dean is great, breakfast sausage has a bit less flavor
  • Chives chopped are optional but add a bit of flavor and bang 

Variations

If you wanted to add even more heat and spice into the mix you could base the seasonings off of our Mexican Taco balls with Bisquick, but use this dry mix as the base for them.

For a super mild version just use regular ground sausage instead of spicy. Beyond that you can change this up with different dips. Those are endless and can make serving these really fun.

How to Make Sausage Balls with Red Lobster Biscuit Mix

  • Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
  • Add biscuit mix, and seasoning packet that is in the box, with melted butter, chives if you like, and shredded cheese into a bowl and mix well.
  • Add uncooked sausage and mix well. It’s easiest to mix this with your hands to incorporate all ingredients, don’t use a stand mixer or things will break apart.
  • Using a 2 tablespoon portion scoop to scoop into balls and roll in your palms to keep round.
  • Place on the baking sheet about 1″ apart and bake for 15-18 minutes or until browned and cooked through.
  • Remove cheddar bay sausage balls from oven and serve hot.
How do you know when sausage balls are done baking?

When they are on the sheet pan you should look to see what color the grease is, it should be clear. The tops and sides should be a light brown too. If you break one in half the center should not be pink at all either.

What is the easiest way to make sausage balls?

If you start with a boxed mix like Bisquick or for Red Lobster Biscuits you can add a lot less ingredients. From there you just need shredded cheese, butter, chives and ground pork. Spicy Jimmy Dean is the best for a bit of spicy and tons of flavor.

If you want to make a large batch you can bake 1 sheet pan full and then put them into a slow cooker set to warm. Before you put the lid on though, place a few paper towels across the top so if there is condensation it will be absorbed and not get wet.

How to Save Leftover Red Lobster Sausage Balls

If you have leftovers you would want to store them after they cool down completely. Store in a freezer bag with all of the air sucked out of there so no condensation builds up and they get wet. Reheat in the air fryer at 380 F. for 1-2 minutes or in the microwave for 30 seconds.

  • 1 tbsp butter, or dairy free alternative
  • 1 c cheddar cheese, shredded
  • 1 lb ground sausage, spicy or regular
  • 1 tsp chives, freeze dried, optional

  • Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
