Oven baked pork chops with potatoes in a creamy sauce with cream of mushroom or garlic parmesan condensed soup is delicious!! We like to make it cheesy for a high protein meal I guarantee your family will love too.

We first shared how to cook 2 inch thick pork chops in oven and now we are here with another one, with a sauce, using regular sizes. If cooked right this meat can be beyond delicious so we will share some tips and tricks to getting them to fork tender results – every time.
There are lots of different ways to make this meat. The most important thing to remember is to not overcook them or they will dry out. To add flavor you can choose to make them sauced, breaded or as baked pork chops with dry rub. We will show you the first in this go around.
The reason why I love this meal so much is that your side dish and main protein cook together in one pan. When done you just serve it up and in about 30 minutes you can eat together.

Ingredient Notes
My favorite cut of pork to use for this would be boneless center cut pork chops. Makes them easier to eat when done and become as tender as possible. They are just a bit pricier but worth it. You could use bone-in and timing wouldn’t really change but with thin pork chops in oven you’d want to decrease timing to 20 min.
Can you use frozen pork chops?
Cooking frozen pork chops is in fact possible and can be successful if done right. You can use the same directions if they are right out of the freezer except you’d skip the sauteeing. Instead, separate them from one another and continue on from there for 40 minutes instead of 30.
As for potatoes I like those with a lighter color like Yukon gold or honey gold potatoes so they get super tender at the same time. You’ll want to slice them in 1/4″ pieces or so.
Onions go in just about everything we make because it is an easy way to add flavor and texture to dinners for sure. Yellow were used here.
As for the sauce I used Campbell’s garlic parmesan and herbs condensed soup with a touch of milk. There are alternatives but I love this flavor. If you cannot find this or prefer a different flavor profile you could use cream of mushroom or our cream of mushroom gravy recipe instead.
If you want to make it cheesy like we did here you will want some shredded mozzarella cheese and parmesan as well. I will tell you that this made it over the top YUM if you ask everyone in our family.

Substitutions and Variations
I don’t feel like it is necessary to add our popular dry rub for pork chops as the sauce gives it a lot of flavor in of itself. You could certainly do both.
As far as adding other vegetables the only other I might suggest would be baby carrots because they take just about as long to get tender. You could add fruit like we did with our pork chops and pineapple recipe as well.
How Long to Cook Pork Chops with Potatoes in Oven
I like to first saute the meat in a pan on the stove for about 4 minutes to lock in the juices as they bake. Then you will need 30 minutes for regular thicknesses until the center reaches a safe 145F degrees. This may vary slightly depending on their sizes but you can adjust a few if they are more or less than the standard 1″ size.

How do you know when it is done?
Aside from checking with a meat thermometer you can tell when pork is done by slicing them in the middle. They should cut easily without pulling or tugging. The center should no longer be pink but rather white in color.
If it is pink it needs more time. If it is difficult to slice but white inside they have been cooked too long and have become tough.


Oven Baked Pork Chops with Potatoes Recipe
Equipment
- 1 cast iron pan or oven safe pan with high sides
Ingredients
- 1 can garlic parmesan & herbs condensed soup, could use cream of mushroom instead
- 1/2 cup milk
- 1 tbsp vegetable oil
- 4 medium pork chops, boneless, center cut used
- 10 oz potatoes, honey gold used, sliced 1/4" thick
- 1/2 cup onion, diced, yellow
- 1 cup mozzarella cheese, optional
- 1/2 cup parmesan cheese, optional
Instructions
- Preheat oven to 400 degrees F. Whisk together condensed soup and milk in a small dish and set aside.
- Heat oil in cast iron skillet and add pork chops, brown on both sides for about 2 minutes on each side. Remove pan.
- Remove chops and add sliced potatoes with onions into pan covering the bottom and overlapping the least amount possible.
- Place pork chops on top and pour soup mixture on top of that. Bake for 30 minutes or until meat reaches 165F.
- If you choose to top with cheese sprinkle on top and switch to broil in oven for 3 minutes until melted and golden brown. Serve.

How to Save Leftovers
You will want to keep as much of the sauce/gravy with the meat to keep them moist. Store when cooled in an airtight container in the fridge for up to 3 days. Then it is best to reheat in a pan over medium heat with a lid so they maintain as much moisture as possible.
