A mug cake with pumpkin puree is easy! You just use the cup to mix all your ingredients together, add the liquid and you’re ready to bake a cake in the microwave for one. The perfect microwave pumpkin dessert when I am craving a bit of sweets after dinner time. (affiliate links present)

Whether I make this type of Maple Pumpkin Bread from scratch or with spice cake mix depends on the ingredients I have on hand and amount of time I have. If I am super impatient I will just go for the easy peasy version where you really only need the boxed dry mix and water. Puree gives it a stronger Fall flavor but you could just use pumpkin pie spice instead.

If you hate the idea of only using a tbsp of pumpkin puree out of the entire can I get it. It will save if you transfer into an airtight container though for several days. Then just make a few more throughout the week for you and your kids or in another recipe that needs a cup or so.

If you want to make the batter homemade the ingredients needed are below. If I make one for each of the 4 of us, usually I’ll use the rest of the can the next morning to make Bisquick pumpkin pancakes. There is no need for a bowl to mix wet and dry ingredients separately like you’d need to do with a regular cake, just use the mug.

I will say that it is important to spray the inside with non stick PAM or something first though. I mean it will still work if not but some will stick and there is no need to waste friends…. You’ll need;

  • 4 tbsp all purpose flour
  • 2 tbsp sugar
  • Baking powder
  • 1/2 tsp pumpkin pie spice
  • 3 tbsp pumpkin puree
  • 2 tbsp milk
  • 1 tbsp vegetable oil
  • 1/4 tsp vanilla

Now you can certainly enjoy this as is without anything on top, with just some whipped cream or make our Jello frosting like in our Chocolate Mayonnaise Cake in a mug.

How to Make Pumpkin Cake in a Mug

  • In the mug, whisk together the all-purpose flour, granulated sugar, baking powder, and pumpkin pie spice until well combined.
  • Add the canned pumpkin puree, milk, vegetable oil, and vanilla extract to the mug. Mix everything together until you have a smooth batter.
  • Place the mug in the microwave and cook on high for about 1 minute and 30 seconds to 2 minutes. Cooking time may vary depending on your microwave’s power, so keep an eye on the cake.
  • The cake should rise and firm up. To check if the mug cake is done, insert a toothpick into the center.
  • If it comes out clean or with a few moist crumbs, the cake is ready. If not, microwave in 15-second intervals until done.
  • Carefully removing the mug from the microwave (it will be hot).

Allow it to cool for a minute or two before adding optional toppings like whipped cream, chopped nuts, cream cheese frosting without butter or a sprinkle of cinnamon.

With cake mix you will just; Add 3 tbsp spice cake mix + 1 tbsp pumpkin puree + 1.5 tbsp water until smooth. Microwave for 1 1/2 minutes and then when cooled slightly top with Cool Whip! For either of these methods you need to choose a microwave-safe mug with a capacity of at least 10 ounces to prevent overflow. Lightly grease the inside of the mug with a bit of oil or cooking spray.

3 Ingredient Protein Pumpkin Mug Cake

1/8 cup sugar free vanilla cake mix + 1/8 cup or 2/3 of a scoop of vanilla protein powder + 3/4 cup pumpkin puree + dash of pumpkin pie spice. Stir together dry ingredients, then add puree until smooth. Spray inside of a large mug with non stick spray and pour in batter. Microwave for 1 minute 20-30 seconds or until firmed in the center.

How Long to Microwave Pumpkin Cake in a Mug

1.5-2 minutes is about right, or until the center is no longer wet and firmed. Now you could opt to add something else on the top like we did with our chocolate chip cookie in a mug. Adding crushed nuts or mini semi-sweet chips to the top (just a pinch) are great choices makes an extra delicious pumpkin treat. This single serving cake can be made with gluten free cake mix if necessary following the steps below.

Can you use yellow cake mix to make the quick and easy version of this? You could but the flavors won’t be as intense as if you used the spice mix version. I have yet to use a sugar free mix but imagine that it would work the same with the water and puree.

When you try this you may want to make it again and again but without as much prep. To make in bulk you can prep the dry ingredients in baggies and just have a note as to what to add that is in the fridge. Use a sharpie to mark the outside so you remember or just come back here to read. 😉

How do you know when mug cake is done?

You can use a toothpick inserted into the middle to ensure the batter is baked thru. If it is till wet when pulled out just add 15 more seconds and test again. You do NOT want to over-bake it as it will turn out a bit rubbery. Mug cakes typically only take 1 minute to 2 minutes total.

Why is my mug cake hard?

If you cook it too long it will become firm and the texture will not be pleasant. Also make sure you spoon and shake the flour into the cup to aerate it so the proper amount is added, no more. If too much flour is used it will become dense and unpleasant.
