Cake mix pecan bundt cake is a fun treat. It’s not really cheating y’all, just makes it easier to start with this dry mix as the base and then add all the other ingredients (not the ones listed on the box itself). Made as a pudding cake you won’t believe how tender this turns out. (affiliate links present)

A cross between this and our Carrot Cake Bundt Cake is also yummy. You can in fac

  • Great Boxed Cake Mix Recipes, I used 1 box yellow cake mix
  • 1 box instant pudding mix vanilla used, 3.5 oz. – or Greek yogurt is a good alternative
  • 4 eggs
  • 1/2 c water or 1 full cup if you don’t add rum
  • Vegetable oil
  • Rum is optional, if not adding increase water to 1 full cup
  • Chopped pecans for the top of the bundt
  • Use a large bowl to mix together

You can make a simple glaze to add after reaching room temperature. Add a few caramelized pecans to the top, whole, if you like.

How to Make a Homemade Bundt Cake

Preheat your oven, grease and flour a 10-cup Bundt pan, making sure to coat all the nooks and crannies. In a medium bowl, whisk together the dry mixture, and then set this aside. In a large mixing bowl, cream the wet ingredients like your softened butter and granulated sugar together until light and fluffy, which takes about 2-3 minutes with a hand mixer or stand mixer.

Add the eggs one at a time, beating well after each addition. With the mixer on low speed, gradually add the dry ingredients in three parts. Begin and end with the dry ingredients. Mix until just combined; do not overmix. Pour the cake batter into the prepared Bundt pan, spreading it evenly. Tap the pan on the counter a few times to remove any air bubbles.

How Long to Bake a Bundt Cake? Bake in the preheated oven for 45-55 minutes, or until a toothpick or cake tester inserted into the center of the cake comes out clean. The exact baking time may vary based on your oven, so start checking for doneness around 45 minutes.

Allow the cake to cool in the pan for about 10 minutes, then carefully invert it onto a wire rack to cool completely. For the glaze, in a small bowl, whisk together powdered sugar, milk, and vanilla extract until you have a smooth glaze. Adjust the consistency by adding more milk if needed. Drizzle the glaze over the top.

Pecan Pie Bundt Cake

This is essentially a pecan upside down cake right? I mean what you add to the bottom of the pan will end up on the top once you flip it over. You may have only tried this as our Pineapple Upside Down Cake with Yellow Cake Mix  but adding nuts is fabulous too.

  • Preheat oven to 325 degrees. Grease inside with non stick cooking spray and flour a bundt cake pan really well.
  • Sprinkle the pecans all over the bottom of the pan. Mix all the cake ingredients together in a large mixing bowl until well combined.
  • Pour the batter carefully into the pan over the pecans. Bake for 45 minutes to 1 hour or until a toothpick inserted in the middle comes out mostly clean with wet crumbs attached.
  • Meanwhile make the glaze. In a medium saucepan melt your butter.
  • Stir in the water and sugar.
  • Bring up to a boil and boil for 4 to 5 minutes, stirring constantly. Remove the pan from the heat and add the rum. When you remove the cake from the ovenImmediately drizzle 1/3 of the glaze onto the cake.
  • Let the cake cook on a cooling rack in the pan for 10-15 minutes.
  • Gently invert the cake onto your serving plate.

Gently poke the cake with a fork or toothpick all over the cake.  Drizzle the rest of the glaze all over the cake. Let the cake cool completely and soak in all the glaze. Slice and serve with some ice cream or as is. You can jump to recipe below and get started.

Bundt Cake with Nuts

You can use all sorts of different varieties, we just chose this one this time. A mix of two or three are wonderful too.

Can you put nuts inside cake batter?

Yes you can. I would stick to about 1/2 cup of crushed pecans, walnuts or almonds for each batch. Same goes with chocolate chips or other add ins so you enhance the bundt cake but don’t overwhelm or weigh it down.

What is the secret to getting a bundt cake out?

1. Use a non-stick cooking spray or melted butter to generously coat the inside of the Bundt pan, making sure to get into all the crevices. Then, dust the greased pan with flour, tapping and rotating it to ensure even coverage.
2. Ensure that the cake is fully baked but not overcooked.
3. Allow the cake to cool in the pan for about 10-15 minutes after removing it from the oven.
4. Gently run a butter knife or offset spatula around the edges of the cake to loosen it from the sides of the pan.
5. Place a cooling rack or serving plate upside down over the top of the Bundt pan. Invert the pan and plate together, so the cake falls out.
