Our easy chicken pot pie with Red Lobster biscuits recipe is delicious! An Old Fashioned comfort food you may have seen made on Tik Tok and want to try with rotisserie chicken and frozen vegetables.

On busy days we are all about quick and easy meals. I have made this Chicken Pot Pie Recipe with Cream of Chicken Soup over and over throughout the years but I wanted to surprise my family with something a bit different so I topped it with Red Lobster biscuits the other night and OMG was it a hit!!

If you have made our Simple Chicken Pot Pie this is an easy way to jazz things up a bit and you can find what you need at the grocery store with no problem. Generally I always make this with the breasts off a rotisserie chicken but you could cook from fresh if you’d rather.

In order to have leftovers I made this in a 9×13″ casserole dish with NO bottom crust because I wanted the top to really shine (and it did). You could certainly cut it in half if you really felt like it needed to be in a pie pan with Pot Pie Crust but believe me, make it as directed below first and you’ll fall in love.

Ingredient Notes

You’ll want cream of chicken soup to make the insides nice and creamy. Two cans are necessary to fill the dish. You could use half homemade cream of mushroom soup (or canned) and half chicken if you’d rather. Milk will thin it out a bit.

Throw in a bag of frozen vegetables. I like the mixed type with green beans, peas, carrots and kernel corn but you could use just frozen peas and carrots if you preferred.

Can you use canned vegetables?

Yes technically you could a can of Veg All or something (drained) but those are already pretty soft and when baked they will continue to break down and to me they get mushy so I prefer frozen.

Chicken should be chopped up into bite size pieces. You could use breasts and/or thighs, whichever is your favorite works for this but it needs to be cooked before added.

Can you use canned chicken?

Yes, in a pinch that is a good substitution (drained). I prefer rotisserie or leftover chicken over that just because the texture is better and not as mushy.

How to Make Cheddar Bay Biscuits

Like our Bisquick Chicken Pot Pie you will only have a top “crust” which we made out of boxed Red Lobster Cheddar Bay Biscuit Mix. You will need to add shredded cheddar cheese and some water to make the dough. Once done you will set that aside until you’re ready to add to the top.

If you cannot find this box we do have a recipe for Bisquick Cheddar Bay Biscuits that you could make instead that tastes almost identical!!

How Long to Cook Chicken Pot Pie with Red Lobster Biscuits

You will want to bake this in the oven for about 40 minutes so the veggies and meat get tender and soak up the flavors of the sauce. You want the biscuits on top to become golden brown, puffed up and baked all the way thru as well.

How do you know when it’s done?

You can tell when Chicken Cobbler is done when the top is browned as they would be if you baked them on a sheet pan by themselves. Note that they will be a bit wet on the bottom since they are baked touching the condensed soup but that makes them taste like dumplings a bit which is what you want. The insides are precooked so you are just warming that together so the appearance of the cheddar biscuits.

Crockpot Directions

If you wanted to make Crockpot chicken pot pie you would need a 6-8 hour cook time, with the same ingredients here cooked on low though. You would then need to bake the biscuits in the oven, serve up the mixture in a bowl with a biscuit or two set right on the top!

Pressure Cooker Directions

If you wanted to make this another way we do have instructions on making Ninja Foodi Chicken Pot Pie which would be the same for this but instead of using refrigerated biscuits on top you would use this dough. Use the lid that is attached on this machine to cook and brown the top.

Chicken Pot Pie with Red Lobster Biscuits Recipe

Equipment

Ingredients 

  • 2 cans cream of chicken soup, 10.5 oz each
  • 1 cup milk
  • 1 bag frozen vegetables, 12 oz.
  • 4 cups chicken, precooked, diced
  • 1 box Red Lobster Cheddar Bay Biscuit Mix
  • 1/2 cup cheese, cheddar, shredded
  • 3/4 cup water, cold
  • 3 tbsp butter, melted

Instructions 

  • Preheat oven to 350. Mix together soup, milk, vegetables and chicken and spread into a 9×13 baking dish. Set aside. 
  • In a separate bowl, combine biscuit mix and cheddar cheese and mix well. Stir in cold water and mix just until dough forms. Add dollops of dough on top of chicken mixture.
  • Bake for 40 minute or until the biscuits in the center of the pan are done, browned and cooked through. 
  • Remove from oven and mix together melted butter and garlic herb seasoning (that comes with the biscuit mix) and use a pastry brush to brush on top of the biscuits. Let stand five minutes before serving.
