Pineapple Cocktail

I don’t think there is a technical name for this drink, and quite frankly I don’t even remember the first time I had it, but it’s a sweet drink with just a splash of coconut rum that goes with just about any meal or appetizer. So here’s how you too can recreate this easy meal duo.

I make these for myself in a 12 ounce glass but it could be made smaller into 8 oz or in a larger batch for a party with Pina Colada Dip and fruit. Easy to tweak it like I do many times with a bit of grenadine on top. Love other sweet elements though you could use that instead.

Other favorite one of their Asian appetizers that goes well is this one if you want just a bite to eat and a drink at home: It seriously only took a whopping 10 minutes to cook up these potstickers filled with ground pork, shredded cabbage, sliced scallions….they include a packet of their dipping sauce in the box too!

Pineapple Upside Down Cake Cocktail

No matter what you pair with this coconut rum cocktail it is sure to be a hit for yourself or if you’re looking for a party drink to serve! Now a dessert is always killer too like our Cake Mix Pineapple Upside Down Cake. For the drink you will need;

  1. Coconut rum – Parrot Bay and Malibu are usually the types of white rum I buy (whichever is on sale), dark rum will bring a deeper flavor.
    • you can find both at your local grocery store but lighter is better to taste the other ingredients
  2. Lemon lime soda like 7-up or Sprite, or ginger ale works too
  3. Pineapple juice – I buy small cans so I can make 2 drinks out of each can
  4. Splash of grenadine or cherry juice and a maraschino cherry is a great add in to addd a cherry flavor
  5. If you like mint add a sprig on top
  6. Can add a piece of fresh pineapple on the side of the glass
  7. Glasses – I like these and you’ll want to add ice too

Tweaks you can do is using different fruit juices to create another delicious cocktail with a variety of flavors. I love rum but whipped cream flavored vodka is killer too, sometimes at the liquor store you can find that. Coconut flavored pineapple rum punch is just so good!

Pineapple Mocktail

Not only is it super yummy and a sweet cocktail you can make but you could make it a mocktail for the kids too! How to make this into a pineapple mocktail for kids and those who don’t consume alcohol. Just use soda, juice and grenadine for them. Any fruit juice will work really. Let a cherry sink to the bottom for a surprise for them at the end too.

  1. Leave out the rum
  2. BAM….that’s it!! LOL

Still super delicious and pretty with a cherry on the side of the glass like we did here. Paired with a scoop of our Pineapple Casserole Recipe it will bring Hawaii to y’all real quick.

Hawaiian Cocktail

For the cocktail you just need 3 things and it’s quick to put together (I’m all about easy recipes). You can adjust the sweetness with a bit more pineapple juice here or there, and how much grenadine you add into each glass. Once you’ve enjoyed this one you should try other summer cocktails like:

Equipment

Ingredients 

  • 1 c lemon lime soda
  • 1/3 c pineapple juice
  • 1/3 c coconut rum, I use Malibu
  • 1 tbsp grenadine optional
  • sprig of mint and cherry optional for garnish

Instructions 

  • Add ingredients and stir. I add ice to keep it nice and cold. Add a cherry and/or mint to garnish if you like.
  • Taste and adjust as you like. If you want it not as strong, add more soda or juice.
  • Leave off rum if making mocktails.
