These bite size savory appetizers or snacks are made from a mixture of ground sausage, cheese, and a dry binder such as baking mix. Rolled into bite-sized balls and baked until golden and cooked through, these are popular for parties, potlucks, and holiday gatherings. Easy to prepare, most will serve with dip(s).
What can you use instead of Bisquick in sausage balls?
We found an alternative here. You can use any sort of biscuit mix really in it’s place but some are better than others. Jiffy baking mix is another choice but not as moist as others. In this case we used boxed cheddar bay biscuit mix that has the most flavor of them all.
Yes Bisquick Sausage Balls are delish, I would say that if I had to compare the two these are more buttery with the Southern seasonings like Old Bay you will just love!

Ingredient Notes
We are going to start with 1 box of Red Lobster Cheddar Bay Biscuit Mix which will be in the baking aisle near the cake mixes. This is the only mixture of dry ingredients necessary because the leavening agents are already mixed in there (bonus).
Butter or dairy free plant based alternative should be melted so it be able to combined and wet the dry mixture well. I like to use salted just to add a bit more of a pop of flavor but isn’t necessary.
Cheese should be shredded with a grater, sharp cheddar cheese is our favorite type but you could really go with any type you really love or mix and match a few. I have used a lactose free variety from Daiya and since it is mixed in with all the other flavors you don’t notice much of a difference other than it doesn’t melt as nicely.
For the meat we are going to go all out with a roll of Ground sausage, spicy or regular Jimmy dean is great, breakfast sausage has a sweet flavor that I don’t care for in this case. Chives chopped are optional but add a bit of flavor and bang
Equipment Needed
You will want a cookie sheet and some parchment paper. If you want smaller bites try our Pressure Cooker Sausage Balls in a silicone egg mold. Either way you will want a bowl to mix ingredients.
Variations
If you wanted to add even more heat and spice into the mix you could base the seasonings off of our Mexican Taco balls, but use this dry mix as the base for them.
For a super mild version just use regular ground sausage instead of spicy. We use this type to make Bisquick sausage muffins when kids are around.. Beyond that you can change this up with different dips. Those are endless and can make serving these really fun.

Sausage Balls with Red Lobster Biscuit Mix Recipe
Equipment
- 1 Bowl
- 1 baking sheet
- Parchment paper
Ingredients
- 1 box Red Lobster Cheddar Bay Biscuit Mix, 11.36 oz
- 1 tbsp butter, or dairy free alternative
- 1 cup cheddar cheese, shredded
- 1 pound ground sausage, spicy or regular
- 1 tsp chives, freeze dried, optional
Instructions
- Preheat oven to 350 and line a baking sheet with parchment paper. Set aside.
- Add biscuit mix, and seasoning packet (that is in the box) with melted butter, freeze dried chives (optional) and cheddar cheese into a bowl and mix until you get a crumbly sand-like consistency.
- Gently fold in the raw sausage and combine. It will take a bit to get this to come together. It's easiest to mix this with your hands to incorporate all ingredients.
- Using a 2 tablespoon portion scoop to scoop into balls and roll in your palms to keep round. Place on the baking sheet about 1" apart and bake for 15-18 minutes or until browned and cooked through. Remove from oven and serve hot.

FAQ
When they are on the sheet pan you should look to see what color the grease is, it should be clear. The tops and sides should be a light brown too. If you break one in half the center should not be pink at all either.
If you start with a boxed mix like Bisquick or for Red Lobster Biscuits you can add a lot less ingredients. From there you just need shredded cheese, butter, chives and ground pork. Spicy Jimmy Dean is the best for a bit of spicy and tons of flavor.
If you want to make a large batch you can bake 1 sheet pan full and then put them into a slow cooker set to warm. Before you put the lid on though, place a few paper towels across the top so if there is condensation it will be absorbed and not get wet.
How to Save Leftover Red Lobster Sausage Balls
If you have leftovers you would want to store them after they cool down completely. Store in a freezer bag with all of the air sucked out of there so no condensation builds up and they get wet. Reheat in the air fryer at 380 F. for 1-2 minutes or in the microwave for 30 seconds.
