Picture this….you have your whole family over for the holidays or a gaggle of girls having a sleepover and you want an easy way to make pancakes in a large batch fast. This is it!! We have made it as one of our popular Bisquick recipes but you can use any brand you like.

Last Christmas I made these for our crazy family and they were a huge hit!! The kids helped and wanted to add all sorts of things to make them even more fun. We threw in some blueberries on one half and peanut butter chips on the other so everyone could choose and OMG were they good.

This year I experimented further using our pumpkin pancakes with Bisquick recipe and that was killer too. It is super versatile and easy to prepare so we make it even more often now.

How Long to Cook Pancake Mix in Oven

There is a slight range from 12-15 minutes depending on the size of pan you have and how well done you want them to be. I like just a touch of golden brown on the top so they stay moist in on a half sheet pan so I take out at the minimum time.

Can you bake pancakes in a muffin pan?

If you didn’t want to slice and insisted on them being round you could use a muffin tin. It would take less time, closer to 6 minutes since there is less batter in each hole but you can make fewer at a time too which is a bummer.

This might be fun for a sleepover situation though so each child can add toppings of their choice to a few though. You would use the same mixture as directed below just baked in a smaller pan.

Sheet Pan Pancake Ingredients

You need to start with the main item which is a boxed pancake mix that already has the necessary leavening agent inside so you need to get out fewer things. I used Krusteauz this time around as you can see above but you could opt for Bisquick or Jiffy baking mix.

I like to add buttermilk and some milk so there is some added fat which means they will become more moist. The lower in fat you use the drier they will be unfortunately, we aren’t counting calories y’all.

To make them fluffy you want to add an egg into the mix. Without it I feel they are a bit more flat.

Butter will give them a bit of a savory flavor, once again adding a bit more fat to make them taste better and extracts will add yum too if you choose to add them.

Here we are going for the easiest method with a boxed mix, but you could use a homemade mixture or follow our easy German pancake recipe if you wanted to go all out.

What can you add into pancake mix to make it better?

Let’s talk about add ins because that is what will make your kids and guests want seconds! There are so many possibilities beyond just flavored extracts you can add to give pancake mix more flavor but I will tell you a few of our favorites.

Now you do want something that won’t burn if placed on top of your sheet pan pancakes. Berries will get a bit more dry than let’s say chocolate chips but will work. Another option is to fold add ins into the batter itself rather than setting them on top when baking in that case.

You can sprinkle on things as well such as cinnamon or nutmeg in the Fall but my favorite choice would be different chips; white chocolate, semi-sweet, peanut butter, butterscotch, all the things sprinkled on top so each quarter is a different flavor!

Oven Baked Pancakes with Pancake Mix Recipe

Equipment

  • 1 13×15 sheet pan could use 9×13, will be thicker, don't fill higher than 3/4 of the way full

Ingredients 

  • 2 cups pancake mix, Krusteauz used
  • 1 cup buttermilk
  • 1/2 cup milk, whole or 2% is best
  • 1 large egg
  • 1/4 cup butter, melted
  • 1/2 tsp vanilla, optional
  • 1/2 tsp maple extract, optional

Instructions 

  • Preheat oven to 350F. Use a bowl to mix together ingredients until it is smooth.
  • When oven is preheated spray sheet pan with non stick spray and pour in batter (do not fill pan further than 3/4 of the way full or may overflow). If you want to add berries or chocolate chips sprinkle on now.
  • Bake for 12-15 minutes or until lightly browned on the top. Use a pizza cutter to slice into squares and serve with syrup.
