Our simple Instant Pot quiche without crust recipe is a great way to bake this French breakfast without an oven! Cooked in a springform pan it comes out fluffy and moist, ready to enjoy with friends or just the two of you.

I have been eating quiche my whole life. My mom would make her Easy Spinach Quiche at least once a month (which I called egg pie) and never thought that it was unusual. Needless to say it gave me an expansive palate as an adult and thus I have made it for my girls their whole lives too.

I will say that there are tons of varieties as far as this food goes. The base remains the same with the two main ingredients being Swiss cheese and eggs but beyond that the add-ins can be swapped out for sure.

We are going to use mushrooms on this go around which is most similar to our Bisquick Zucchini Quiche full of veggies inside and NO crust. Since it is essentially steamed I skip that part.

How to Make Quiche Without a Crust

If you have only enjoyed this food with Quiche Crust you will be surprised to know that you can totally skip that part and honestly it is almost even better. Way lower carbs and when cooked perfectly it is not necessary to hold it all together. The key is perfect timing and allowing it to cool in the pan to solidify, that is it!

Can you add a crust?

With this recipe I wouldn’t. Steaming will create a sort of mushy texture to the dough which won’t be pleasant. It is better to skip that entirely and just pour the contents in your sprayed pan from the get go.

You can follow the directions below with the lid that is not attached to pressure cook it and then have the option to crisp the top at the end with it’s other function. Crustless Quiche Ingredients

The main ingredient in any type of quiche are eggs. I prefer organic free range for health reasons and the yolks are much richer with a lot more flavor too. Just my two cents on that one. Whether you make this one or our smaller Pressure Cooker Egg Bites version they are my go to.

As far as the cheese goes typically Swiss cheese is always the choice, but isn’t necessarily a requirement. If you don’t care for this type I would choose pepper Jack personally to add a bit of heat and it has a great stringiness to it so it is similar.

You want a bit of milk to make your other ingredients to go further and make it fluffier when done as well. I like whole or 2% for richness.

In this case we added some sliced cremini mushrooms. You could use button but those get a lot softer or baby bella portabellos are firmer and work well too. Another option might be to use diced bell peppers or make our Cottage Cheese Quiche instead if you preferred.

What type of pan do you need to use?

In order to fit inside you need to use a 6 inch size, round is best. You can use either a springform type where you can lift the contents out a bit easier or a solid model. Either way you want to make sure you spray it liberally inside with non stick spray!

Instant Pot Quiche

Crustless Instant Pot quiche with mushrooms is an easy breakfast or French brunch to make quickly. Use Ninja Foodi pressure cooker too.
Prep: 15 minutes
Cook: 25 minutes
Servings: 4

Equipment

Ingredients 

  • 6 large eggs
  • 1/2 cup milk, whole
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tsp garlic, minced
  • 4 oz mushrooms, sliced
  • 1 cup Swiss cheese, or pepper jack
  • 1 cup water, for inside pot to steam quiche

Instructions 

  • In a bowl whisk eggs, then add milk and seasonings. Stir in sliced mushrooms.
  • Spray the inside of your 6" round pan with non stick spray. Spread cheese on the bottom and spread out evenly. Pour egg mixture on the top.
  • Put trivet on the bottom of the pressure cooker, pour water inside. Place filled pan on top of trivet.
  • Pressure cook on high for 25 minutes with a 10 minute natural release. Release rest of steam and quickly remove lid flipping upside down so condensation doesn't fall on to the top of the quiche.
  • Allow to cool for 10-15 minutes in pan. Slide knife around outside to release. Release outside of springform pan if used and transfer to a plate to serve.
