You do NOT want to dry it out so stay close. Set to 15 minutes and then check. You want it to be easily flaked with a fork, white vs. translucent in color. If not done give it another 2 minutes at a time and check again. Timing will vary depending on how thick your piece is so keep that in mind.

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Grease a baking dish lightly with olive oil to prevent sticking.

If you didn’t want to use breading at all you could just brush with olive oil and seasonings, and still bake as directed below until flaky and 145 degrees F.

  1. Set up a breading station by arranging three shallow dishes. In the first dish, combine the all-purpose flour, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using). Mix well to incorporate the spices evenly.
  2. In a second dish, whisk the eggs. This will act as the “glue” to help the breadcrumbs adhere to the fish.
  3. In the third dish, add the breadcrumbs. You can use plain or seasoned for added flavor. You may also use a mixture of both to create a balance of textures and tastes.
  4. Dip each fish fillet into the flour mixture, coating both sides and shaking off any excess.
    • Next, dip the floured fillet into the egg mixture, allowing any excess to drip off.

  • Cut your fillets in half lengthwise so you have 8 pieces. Blot each piece dry with paper towels.
  • Put flour in one bowl or pie plate. Whisk eggs with a pinch of salt in a 2nd bowl. Mix panko bread crumbs with parmesan cheese, garlic powder, salt and pepper in a 3rd shallow bowl. 
  • Dip each piece of fish into flour (both sides), then into the whisked egg (both sides), then roll into bread crumb mixture until coated. 
  • Place on baking sheet with some non stick spray and bake in oven at 400 degrees for about 12-15 min until flaky and white in the middle thickest part.
