Ingredients 

  • 4 fillets cod, defrosted
  • 1 c Panko breadcrumbs
  • 3 tbsp parmesan
  • 1/4 tsp salt and pepper
  • 2 eggs
  • 1/2 c all purpose flour
  • 1 tsp garlic powder

Instructions 

  • Cut your fillets in half lengthwise so you have 8 pieces. Blot each piece dry with paper towels.
  • Put flour in one bowl or pie plate. Whisk eggs with a pinch of salt in a 2nd bowl. Mix panko bread crumbs with parmesan cheese, garlic powder, salt and pepper in a 3rd shallow bowl. 
  • Dip each piece of fish into flour (both sides), then into the whisked egg (both sides), then roll into bread crumb mixture until coated. 
  • Place on baking sheet with some non stick spray and bake in oven at 400 degrees for about 12-15 min until flaky and white in the middle thickest part.
