Air Fryer Blueberry Hand Pies

Air Fryer blueberry hand pies with refrigerated pie crust baked in the oven or to air fry are delicious for breakfast or dessert. Made with homemade filling and fresh fruit or one of our Blueberry Canned Pie Filling Recipes, it’s an easy family friendly treat you’ll love.

How to Make a Blueberry Hand Pie

Once you get the hang of these you are going to want to make them with all sorts of other hidden goodies. During the Fall months our Pumpkin Hand Pies recipe is super popular with a bit of puree and cream cheese inside. You could do the same thing with this with both flavors to make it creamier if you wanted to.

I like to make things as easy as possible or at least provide directions for both from scratch and simple variations. Using refrigerated pie crust, or puff pastry would be the quickest. If you don’t want to spend the money on that you could use our 3 ingredient pie crust instead that is much cheaper.

How to Make Hand Pies with Pie Filling

If you use a can of fruit filling it is much quicker and easier to make as well. But if you are trying to cut down on sugar or make sugar free even I’d make that yourself. Sugar can be swapped out for sweet and low or another alternative and to make gluten free, arrowroot can be used instead of cornstarch.

  • 1 package refrigerated pie crust, defrosted
  • Frozen blueberries, or use 1 can of pie filling and skip other ingredients
  • 2 tbsp butter
  • Brown sugar
  • 1 tsp vanilla
  • Lemon juice
  • Cornstarch
  • egg

What are the 4 types of pie fillings?

Cream, fruit, custard and savory like our Hand Meat Pies. You could make a dinner version on one baking sheet and these for dessert on another. The same steps you’d follow, just using a different center. What I normally do to make a savory version is to use the protein from the night before. I keep it in the fridge overnight, take it out about an hour before making these and then I’m good to go.

How do I stop my hand pies from leaking?

Use a very hot heat. You can refrigerate them prepped too for 30 minutes before baking too. Preheat the oven to 400 degrees Fahrenheit. Prep a baking sheet with parchment paper and set aside. Remove the pie crust from the fridge to thaw to room temperature.

Now when it comes to this variety you don’t really need to cook it beforehand like you would for Air Fryer Chicken Hand Pies. Fruit doesn’t need to have a specific internal temp. but meat would so you’d want to use precooked proteins in that case. Makes these even easier as any fresh produced cooked down with sugar will work.

Blueberry Hand Pies in Oven

  • If using canned blueberry pie filling skip steps to make it
  • In a saucepan over medium high heat add the blueberries and butter. Warm on medium heat until the blueberries release its juices. Add in the brown sugar, vanilla extract, lemon juice and salt.
  • Mix together until combined and the blueberries have broken down.
  • Cook for about 8-10 minutes. To thicken this mixture, add the cornstarch. Stir together until combined and then remove from the heat.
  • Let sit for a couple minutes to cool and thicken. On a clean and floured surface, roll out the pie crust dough.
    • Use a large circular cookie cutter (3.5 inch) to cut out circles in the pie dough. Repeat with the second dough slab in the package. Take any scraps and reroll into a dough ball and roll out to cut out more circles.
  • Place these circles on the baking sheet. Fill the center of each circle with a large tablespoon of blueberry filling, or make Peach Hand Pies. Use egg wash to baste around the edges of the dough.
  • Fold the circle of dough in half to create a half moon and crimp with a fork. Place 2-3 slits in the center of the hand pie.
    • Repeat until all hand pies are made. Brush each pie with egg wash and can sprinkle with sanding sugar on top to make sweeter.

Bake on a prepared baking sheet in the oven for 15 minutes until golden brown. Remove the hand pies from the oven and cool for 10 minutes or cool to room temperature if adding a glaze. Enjoy as is or drizzle melted frosting over the top of each one. Start to finish they take about 30 minutes to make which is a win.

How Long to Cook Air Fryer Blueberry Hand Pies

If you would rather use a Ninja Foodi or Cosori without heating up your house that works too!! You would make these the same way, only downside is you can only “bake” a few at a time. You can make these smaller to fit more though if you wanted. Use the same round cutter, but fill half of that and fold it over like a half moon shape.

Ninja Air Fryer Blueberry Hand Pies

  • Preheat air fryer to 350 degrees for 5 minutes
  • Follow instructions as described above
  • Spray basket with non stick spray
  • Set inside without overlapping
  • Brush the tops with your egg wash in a small bowl and sanding or granulated sugar for added sweet
  • Air fry for 10-12 minutes or until they are golden brown on the top

You could use the instructions to make both Hand Meat Pies for dinner and these for after.

How do you reheat hand pies in an air fryer?

Just preheat at 380 F and then warm again for 4 minutes or so to heat to the middle but not over-brown the outside crust.

What is the best glaze for pie crust?

There are a few ideas for this. Easiest is to melt a tub of cream cheese frosting and drizzle on top. Another is to whisk together 1 cup of powdered sugar with enough milk or lemon juice for tang. Just enough to thin it out to the texture you want.
