How to Make Easy Banana Pancakes

I have made pancakes in the oven during the holidays too, that is fun. Those have a few more ingredients and have more of a German pancakes feel to them. Great for a group of people you can just slice and serve. These are more “normal” using a skillet and the batter itself.

Yes you could essentially mash one up and throw it into your Bisquick mixture but that isn’t nearly as good. This one uses a few so it is not quite as fluffy but denser which means it’s moist beyond belief. If you look over to your fruit basket and see something like these but hate to waste food, this is the answer.

The fruit is heavy and will weigh it down a bit. Once you take a bite you’ll realize the looks don’t matter, the taste is all there and then some. You don’t have to add chocolate chips either. I don’t always do this myself. You could add tiny crushed bits of nuts if you wanted too, but just a small palmful. You’ll need;

Ingredients

  • 2 bananas and egg
    • mashed fruit, brown and ripe is best
  • 1 cup of all purpose flour
  • Baking powder
  • White sugar
  • Milk or almond milk
  • 2 tbsp yogurt Greek, dairy free, or use 2 tbsp vegetable oil instead
  • 1 pinch salt

Variations

1/4 cup to 1/3 c. mini chocolate chips would be optional to add. Another option is a touch of vanilla extract or even almond tastes pretty amazing. If you want to make it kinda’ like Elvis’ favorite sandwich you can even spread some peanut or almond butter on top. Roll it up and serve that way as a fun finger food for the kiddos.

Banana Pancakes With Pancake Mix

If you wanted to use Bisquick or Krusteauz you would still follow the directions on the back to make the batter. When done fold in a banana that has been mashed and your chocolate chips. This will make them much more moist than “normal” in an easy way.

We have done this sort of tweak other times with our Bisquick pumpkin pancakes, another great flavor, and during the Fall months it is yet another fave.

No baking powder

If you needed a different base you could use our Pancake Recipe Without Baking Powder instead. Then fold in 1 mashed banana with any additional add ins you would like but I would keep it to 1/4 of a cup.

Dairy Free Banana Pancakes

Ok so I have made a few things with these that my husband can enjoy as well. He cannot have lactose so I just use almond milk and Silk yogurt. I do the same thing when I am making banana bread bundt cake and you literally can’t tell the difference. Now when you’re cooking these they will look a bit flat, don’t worry.

Banana Nut Pancakes

If you do choose to add a bit of nuts I would opt for small pcs. of walnuts. They aren’t super crunchy and won’t mess with the overall texture that should be kept relatively tender. Now if you wanted to just transform your every day Bisquick recipe into this I would only use 1 banana and fold that into your mix.

How to Make Banana Nut Pancakes from Scratch

  • Mash the bananas in your bowl, add all other wet ingredients and combine together.
  • In another bowl whisk together the dry ingredients; baking powder and flour, incorporate this with your banana ingredients and mix the batter together.
  • If you want to fold in chocolate chips do so now, mini works best.
  • Heat your skillet over medium heat, add non stick spray or a bit of melted butter.
  • Use a 1/4 measuring cup to pour in pancake batter into your pan so they are all about the same size.
  • Allow to cook until lightly golden browned, then flip over and brown on the other side.
  • Add to a plate and continue on like this until all batter is used up.

Serve banana pancake recipe with slices of fresh (yellow peel color) fruit and a drizzle of maple syrup on top. Want to try another combo?? Spread some peanut butter on top instead! OMG is that yummy too, Nutella is amazing too. OH yes.

Can you make waffles with banana pancake batter?

You can make homemade waffles with the same batter but it should be thicker. If it is the summertime I would highly recommend even more sliced fresh fruit on top with Cool Whip. Sprinkles are fun, piped frosting over the top or even some sundae chocolate or caramel syrup. Make a pancake bar for your kids!

How do you preserve pancakes?

You can save your pancake stack if you have any at the end. I too hate to waste food so I get you and am there with you on that. Use a sealed container ideally for this. They can get kinda’ weird on the outside if not stored right so keep reading. Lay a paper towel on the bottom, then one pancake, another piece of paper towel on top and keep layering until you’re done.

Put into the fridge overnight and then enjoy them the next morning. You could keep up to 3 days this way but they will continue to dry out as they sit in the cold so I recommend next day. You can add a bit back in when heating them up to serve but still….

Can you reheat leftover pancakes?

Yep! You will want to add back a bit of moisture. You can do this will a light spread of butter on top, a drizzle of syrup, whipped cream, or even honey works. Microwave on a plate for 45 seconds or so and rotate it around halfway if you don’t have a lazy Susan inside your machine.

What can you add to pancake mix to make it better?

1. A mashed banana is our favorite to add moisture and a bit of flavor
2. You can add in 1 extra egg to make more tender and fluffy too
3. Mini chocolate chips are always a winner, especially with kids
4. Always use milk instead of water, even if directed to use the latter
5. Do not over-stir your batter, just fold together until incorporated
