Porketta Roast Recipe
What I thought of when I first heard this word was, itโs gotta be a smaller hunk of pork. Somewhat true in some regards since it typically made with boneless pork shoulder or butt which means it takes up less room and is way easier to cut and serve.
You will need more ingredients than just packaged mixes like our Slow Cooker Pork Roast Onion Soup Mix but itโs worth it. We used a 3 pound piece because that feeds our family + sometimes have a bit left over for the next day.
What is Porketta roast?
Also spelled porchetta, this is an Italian-style boneless pork roast seasoned with herbs, garlic, and spices, then slow-roasted until juicy on the inside and can be crispy on the outside. Itโs rich, savory, and super aromatic. Typically made from a shoulder or butt, sometimes with the skin on, but often just the meat.
Ok so you will need the meat itself and some sort of liquid so it can steam with the lid closed. You can use almost anything for this from water to broth or even beer adds a ton of flavor you will love. Most people want seasonings too, which can be varied.

- Salt and pepper
- Oregano, dried or fresh and chopped
- Garlic powder, rosemary, onion powder
Changes you can make
If you wanted a richer sauce for your Crockpot porketta roast at the bottom like our Beef Arm Roast Recipe you could substitute 1/2 cup balsamic vinegar with the broth. To make a gravy at the end I would suggest this option.
If you wanted loads of flavor beyond the thick rub on the outside you could use the ingredients in our Mississippi Pork Roast, but that would not be traditional flavors. Made from scratch you can tweak this to your hearts content though.

Pork shoulder or boneless butt are traditionally used to make this style that is coated generously with Italian seasonings. You want a thick crust for flavor.
On high we found that 6 hours was ideal. If you wanted to use the low setting it would be closer to 7-8 hours depending on weight. Near the end test with a meat thermometer to ensure the thickest center portion reaches at least 145 F. to be safe to consume.
How to Cook Crockpot Porketta Roast
- Add ingredients for the rub; oil, salt, oregano, garlic powder, rosemary leaves, onion powder and ground black pepper into a bowl.
- Coat all sides except for the bottom.
- Place into the slow cooker with broth around the outside.
- Cover and slow cook on high for 6 hours
- Slice and serve.
How to make the gravy
Whether we make Frozen Pork Roast in Instant Pot or this there are always wonderful drippings at the bottom of the pot. Donโt get rid of those! You can pour on top as is or pour into a small saucepan over medium high heat. In a small dish whisk together 1 tbsp cornstarch + 3 tbsp cold water until smooth. When bubbling whisk this in, continue to stir and thicken. Season with salt and pepper to create a gravy.
What can you make with leftover porchetta
Typically I will use this as Pork for Tamales the next day if we have any. It depends on the amount. If there is just a bit I might dice it and put into chili, or make a small casserole with noodles and a white sauce for lunch the next day.

Equipment
- 1 slow cooker
Ingredients
- 2.5-3 pound porketta roast, boneless pork roast
- 1/2 c broth
Rub
- 2 tbsp vegetable oil
- 1 tsp salt
- 1 tsp oregano, dried or fresh and chopped
- 1 tsp garlic powder
- 1 tsp rosemary, dried or fresh and chopped fine
- 1 tsp onion powder
- 1/2 tsp pepper
Instructions
- Add oil to a bowl and stir in salt, oregano, garlic powder, rosemary leaves, onion powder and ground black pepper. Using a pastry brush, brush all sides of the pork roast except for the bottom.
- Place the roast into the slow cooker and carefully pour the broth around the outside. Cover and heat on high for 6 hours or until it is tender and center reaches at least 145 degrees F in the thickest part, center.
