Years ago I created this really popular 4 Ingredient Banana Bread and it was then I realized I could tweak a dry cake mix into something even more delicious and kept going….. Now this one tops the list of what we want to make when our bananas get too brown to enjoy eating.

There are 3 ingredients to make the basic batter but you can certainly add others like we did here with semi-sweet chocolate chips as well (which I highly recommend). Baked as directed it stays super moist without any oil necessary.

If you made this from scratch you would need a lot of other things including cocoa mix which can be rather expensive lately so I prefer this easy method since it runs only about $6 a loaf, or 24 muffins.

Double Chocolate Banana Bread Ingredients

You are going to want to choose a box of Devil’s Food cake mix. Duncan Hines and Betty Crocker have great ones, I choose whichever is on sale though I prefer the one that says with pudding inside if I can find it.

Ripe bananas should be browned on the outside but make it before they turn black because the fruit inside of those becomes a bit mushier than I would like.

Your eggs should be left out about 30 minutes before making the batter so they are closer to room temperature. Organic free range are richer and will create a more moist outcome.

And if you want it to be double chocolate add chocolate chips, some inside the batter and a handful on top is best.

Can you add nuts?

Yes, you could substitute the chips for nuts or add both though I would stick with about 1/4 cup of crushed walnuts and not much more or it will weigh it down. I don’t like my soft foods to have crunch in them but that is my preference so I leave them out.

How Long to Bake Cake Mix Chocolate Banana Bread

In a loaf pan 45 minutes is just about right. This bake time allows it to become fluffy and cooked all the way thru in the center. I like to line my pan with parchment paper. Then I can lift it out of the hot pan and let it cool on a cooling rack. This will allow it to remain super tender.

How do you add parchment paper to a loaf pan so it stays down?

If you have ever tried to press a piece of parchment into a pan it can be frustrating. It pops up and out every time right? There is an easy trick to avoid this. Just wad it up tight like a piece of trash. Open it back up and press inside the pan, it will stay!!

How Long to Bake Chocolate Banana Bread Muffins with Cake Mix

This is the typical timing of our Cake Mix Banana Bread Muffins at about 18 minutes. If I am in a hurry or don’t want to bother slicing into individual pieces I will make these instead. I like using paper muffin cups for easier clean up. Those make it easier to lift out of the pan.

How do you know when it’s done?

I do not recommend the typical answer of “when a toothpick comes out clean”. That to me means it has dried out and won’t be as moist. Instead use your eyes and finger to test. Meaning the middle should be peaked and it should bounce back when touched gently in the center. If you do use a toothpick there should be moist crumbs attached vs. dry for the ideal texture.

You can use the same batter to make muffins in a muffin tin. Add paper liners and fill 3/4 of the way full and only bake for 18 minutes or until when lightly touched in the center they spring back. Remove from hot pan and transfer to cooling rack and enjoy.
