Roasted brussel sprouts and potatoes baked or air fried together is a great pairing. Super healthy and full of flavor, a family friendly dish that doesnโt take long to cook at all. You can use russets if you prefer but sweet orange bites is what we love. (affiliate links present)
Roasted Brussel Sprouts and Sweet Potatoes Recipe
We have shared many ways of cooking these two veggies. In the oven we show you how long to bake brussel sprouts at 450 but I donโt always want to heat up my house. If it is in cooler months and you want to use that method you can, and add bite size sweet potatoes on the same baking sheet.
Of course you could choose to make one or the other too. Alone each of them have great flavors that are a savory side to just about any main dish. Made in a Cosori or as one of our healthy Ninja foodi recipes youโll love.
Now of course you could cook these separately, we have done that before. Make a batch of brussel sprouts recipe in air fryer and then wait until those are done.
Try to keep them warm while your air fryer sweet potato cubes crisp. BUT um sometimes we donโt have time for that and we just want both together!!
How to Cook Air Fryer Brussel Sprouts and Sweet Potatoes
- Rinse fresh brussel sprouts, peel sweet potato and cut ends off of brussels.
- Slice brussels in half and cube potato into large bite size pieces.
- Set on paper towels and roll up to dry outsides from moisture.
- Pour into a bowl with oil and toss to coat, then add seasonings like garlic powder, salt and pepper.
- Preheat air fryer to 380 degrees F for 5 minutes and then pour into the air fryer basket in a single layer
- Air fry roasted vegetables for about 15 minutes tossing halfway thru or until tender to your liking.

You may want some more salt and pepper on your roasted veggies to taste when done but typically this is perfect. Other ideas to add another flavor element to the top when done would be lemon zest, dried cranberries of course bacon bits are great, balsamic vinegar drizzle adds some depth of flavor too.
Ninja Foodi Sweet Potato and Brussel Sprouts
Now you can roast vegetables a Ninja Foodi too. Combine a few like our Brussel Sprouts and Cauliflower that cook at the same rate. If you want to double or even quadruple the amount you should use your oven instead.
Now letโs get down to the basics to make sure this comes out perfect. #1 you do NOT want to leave the skin on these potatoes. Unless youโre Baking Sweet Potato at 400 in the oven it needs to come off. The nice thing about this is that everyone can enjoy, and it is healthy.
It is gluten free, dairy free with oil instead of butter to coat them (though you could use either) and filled with natural flavors of fresh produce.
Do you have to soak sweet potatoes before air frying?
You can if you want to make them crispier, it will remove a lot of starch this way. Just dice and soak for 30 minutes before adding into your basket. You can jump to recipe card below but letโs go over real quick how we make this happen. First letโs prep the goods. Start by washing and scrubbing the outside under cold running water to remove any dirt or debris.
How to Cube Sweet Potatoes
- Trim off both ends of each sweet potato using a sharp knife. This helps create a stable base for cutting.
- Use a peeler to remove the outside skin entirely, discard.
- Slice the potato crosswise into rounds, each about 1/2 inch thick. These rounds will serve as the base for creating cubes.
- Take several and stack them on top of each other. This makes it easier to cut them into cubes all at once, ensuring uniform sizes.
- Hold the stacked rounds together firmly with one hand. With your other hand, make a series of lengthwise cuts to create strips. These strips should be approximately 1/2 inch wide.
- Once you have created strips, turn the stack of strips and make perpendicular cuts to create cubes. Aim for cubes that are about 1/2 inch (1.25 cm) in all dimensions for uniform cooking.
- Continue this process with the remaining rounds, creating as many as needed for your recipe.
Cubed taters are versatile and can be roasted, sautรฉed, boiled, or used in various dishes like sweet potato hash, Fried Sweet Potato Latkes, soups, and salads. Be mindful of keeping the cube sizes relatively uniform to ensure even cooking.
If you donโt think your end result was crispy enough it could be a few reasons; try soaking for 30 minutes before cooking, you may have added too much and they were not in a single layer, and the biggest reason is that you need to press paper towels on the outsides to remove as much moisture as possible.
I like 380 degrees F for firmer varieties since you need a bit lower and longer to become tender. You can move up to 400 degrees at the end to really get crispy but at this temp. the outsides may get too brown by the time the center softens up.

- 1 c brussel sprouts, halved
- 1 potato, sweet potato used, peeled and cubed
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 tsp pepper
- 1/2 tsp salt
Instructions

- ** You can double or triple amounts above for the oven as you can fit more on a large sheet pan, timing won't change.
- Baked Brussel Sprouts and Sweet Potatoes โ Preheat oven to 425 degrees F. Wrap baking sheet in non stick aluminum foil and pour veggies on top, do not overlap them. Bake for 25 minutes flipping halfway thru or until they are fork tender and golden brown.
