These easy Bisquick sausage muffins with cheese for breakfast grab and go style are delicious. Use Italian or spicy Jimmy Dean ground sausage for a bit of heat like we did with our Bisquick Sausage Balls!

This is just one of our favorite Bisquick Recipes you will want to make over and over again. They aren’t just fabulous for breakfast but as a hearty snack when you have busy afternoons with the kids. (affiliate links present)
In the past we made these Bisquick Savory Breakfast Muffins without meat. Those are more like biscuits, still delicious but not as filling. In order to pack in the protein I thought I would add our favorite ground sausage into the mix (like our Sausage Balls with Red Lobster Biscuit Mix) and OMG were these fabulous!
Jimmy Dean Sausage Muffins Recipe
If you have been following my blog for any length of time you know that hot Jimmy Dean is my favorite of all times. I have used it in casseroles, made into patties in the morning and now these! It gives it pop of heat to any dish and can be cut with ground beef for a medium mild spice level if you prefer.

Ingredient Notes
You are going to want to start with some Ground sausage, we like Jimmy Dean spicy sausage
I suggest that you use regular Bisquick, not heart healthy so they are as moist as possible. Lower fat versions can be dry and not ideal.
- Eggs is the only moisture you need to create the batter
- 1 cup of shredded cheddar cheese is what we prefer
If you are making these in the oven you will want a muffin tin. For smaller bites try our Pressure Cooker Sausage Balls version with two egg molds. Either way you will want 2 bowls and a small cookie scoop is handy.
Variations
You could make this dairy free with lactose free cheese or leave that out all together. it is a must for us as we love sharp cheddar but any shredded hard cheese will work. There is no milk needed so that is all you would need to change.
If you do not want this to be spicy you can use breakfast sausage, Italian or mild versions. No matter what version you prefer just make sure it is ground so it can be browned at the start and broken up into small bits.
Once you make this you could from there tweak it with other proteins. Of course ground beef works just the same with 1 pound used. If you wanted to make a version of our Pepperoni Pizza Muffins you could dice up a package of that which is precooked with olives and diced mushrooms! Just stick to the same measurements either way.



Bisquick Sausage Muffins Recipe
Equipment
- 1 Bowl
Ingredients
- 1 pound ground sausage, we like Jimmy Dean spicy sausage
- 1 cup Bisquick
- 4 large eggs
- 1 cup cheese, shredded, cheddar
- 1/2 tsp cayenne, optional, leave out if you use spicy sausage unless you want it really hot
Instructions
- Place sausage in a skillet and heat over medium heat, breaking apart and cooking until browned. Remove from heat, drain grease and let stand to cool.
- Preheat oven to 350 and generously grease a 12 cup regular size muffin tin with nonstick cooking spray. Set pan aside.
- Add bisquick, eggs, cheese and sausage in a bowl and mix well (add cayenne for heat if you aren't using spicy sausage).
- Using a 3 tablespoon portion scoop, scoop batter into prepared muffin tins. Bake for 20-22 minutes or until cooked through and browned. Remove from oven and scoop muffins out of hot pan and set on cooling rack for a few minutes before enjoying.

The best way to bake a protein packed muffin is to add meat like we did here! Make sure you cook it first and cool before folding it into your batter so they stay fluffy and light. You could also use higher protein milk (or even a plain protein shake) if that is a necessary ingredient.
Bisquick is a baking mix that contains flour, leavening (baking powder), salt, and fat (usually shortening). If you are substituting Bisquick for flour in a recipe, you typically need to adjust for these additional ingredients.
1 cup Bisquick = 1 cup all-purpose flour + 1½ tsp baking powder + ½ tsp salt + 1 tbsp fat (butter, shortening, or oil)
Yes you could substitute Kodian pancake mix for Bisquick typically in a 1:1 ratio but with the higher protein mix you may need a bit more liquid. Add a bit more water 1 tbsp. at a time until you achieve a thick muffin batter if you are making our sausage biscuits with that brand.
