How to Make a Cake with Bananas

Ok so the texture of this is a bit like our Banana Bread Bundt Cake but in a smaller form. If you just want something for the 4 of you to enjoy today and tomorrow this is the right size for yโ€™all. Made in a square pan 9ร—9 size it is just one layer and a great way to use up browned fruit instead of throwing them away, that would be tragic.

A bit more stirring than our layered Banana Dump Cake, mashed bananas gives your baked goods all the oomph you crave and more. With natural sugars to boot you want them to be in between brown and black. The darker they are the more sugar they will have and the sweeter your outcome will be.

One Layer Banana Cake

We have done this in a round cake pan as well with a bit of caramel and slices of fruit in the bottom, which ends up on the top. You should refer to our Banana Upside Down Cake for that goodness. The add-ins are many, include what youโ€™d like or make plain. From crushed walnuts to mini chocolate chips or even caramel bits they are all delicious.

We have two options to add to the top (or sliced in half for the center of the cake). You can just whisk together instant pudding and milk as seen below but for added wow you can fold in a tub of whipped topping for our Cool Whip Pudding Frosting!! The difference is texture and thickness. The latter is a creamy bite of pure heaven I tell you. Try both and see which you love best.

As always you want to incorporate the dry flour mixture in one large bowl and wet ingredients in the other before incorporating into a light and fluffy combo. If you are adding nuts or other things like dried cranberries, fold those in at the very end for best results. This pudding cake doesnโ€™t have the dried mix in the batter, itโ€™s on the top instead.

Banana Cake in 9ร—9 Pan

Like quick breads, aka our Yellow Cake Mix Banana Bread you could tweak the size of the pan, a bit. If you want it higher and skinner like a loaf you could use a rectangular loaf pan instead, the large type. Either way I like to line it with parchment paper so you can lift it out when done and set on a cooling rack before pouring batter into the prepared pan.

Ingredients

  • Butter unsalted, melted
  • Brown sugar packed
  • Eggs
  • 1 tsp vanilla
  • All purpose flour
  • Baking powder
  • 1/2 tsp salt
  • Bananas ripe, browned

If you wanted something taller and โ€œfancierโ€, double for a 2 layer cake layers you can then add frosting in between. If you have a larger group this type of cake with cream cheese frosting (+ banana flavor incorporated in there) in the middle and top is always a hit.

Why is my banana cake not moist?

#1 reason why this is the case is that you have over-baked it. This is How Long Does it Take to Bake a Cake. I mean I am very particular when it comes to this. Set your cook time to the minimum listed in the recipe card when baking. Look at it. As soon as the center no longer looks wet and it has risen, check it with a toothpick. You do NOT want it to be dry, you want moist crumbs attached.

Then once that is achieved have a wire rack ready on your countertop. Let it sit in the pan for no longer than 5 minutes. Then lift it out and set it on the rack, if not the hot pan will continue to bake it and dry your cake out. No good.

How to Make a Cake with Bananas

Can you replace eggs with bananas to make a cake?

Yes!! 1 ripe banana = 1 egg. This is a great option if you need an egg free cake because of dietary needs. It also adds a lot more moisture into your outcome. If you substitute it entirely you will notice that it will be more dense than if you didnโ€™t so keep that in mind but it will be beyond moist.

How brown should bananas be to make banana cake?

Itโ€™s generally best to use bananas that are ripe and overall brown, or even overripe. The ideal bananas for banana cake are those that have a deep dark yellow color with brown spots or patches covering the peel. Additionally, they should be soft and easily mashable when pressed.

Does banana cream cake need to be refrigerated?

Yes, with the addition of fresh fruit, baked goods typically needs to be refrigerated due to its perishable ingredients. Anything that includes whipped cream, cream cheese frosting, custard or pudding will spoil if left out. Refrigeration helps to preserve the freshness and prevent spoilage.

How long does a cake with fruit last?

3 days is ideal, up to 5 if refrigerated and wrapped tightly. Keep in mind that the texture will change the longer it sits. It will start to get a bit gooey because of the fruit in it, and even more if you added a topping that is wet.

  • 1 c butter, unsalted, melted

  • 2 eggs

  • 1 c bananas, ripe, browned

Instructions 

  • Preheat the oven to 350ยฐF or 175ยฐC and prepare a 9ร—9-inch baking pan with nonstick cooking spray and parchment paper. In a large mixing bowl, combine melted butter and brown sugar until well blended. Beat in the eggs one at a time, then stir in the vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mashed bananas (and 1 cup chopped toasted walnuts if you want) until evenly distributed.
  • Spread the batter evenly into the prepared pan and bake for 35 to 45 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  • While the base is baking, prepare the banana pudding layer by whisking together the instant banana pudding mix and milk. Or make our Pudding Frosting Let it set in the refrigerator until the base has cooled.
  • Once the base is cool, spread the banana pudding layer evenly on top. Refrigerate the brownies for at least 2 hours to allow the pudding layer to set.
