Air Fryer Mini Muffins

We have shared How Long to Bake Mini Muffins in a regular muffin tin baked in the oven but now we are going to go over that in this machine. With hot air rotating all around it is a great way to make a small batch for just 2 of you, or just a few at a time.

Now we have made blueberry Homemade Air Fryer Muffins before with silicone muffin cups regular sized, but this tin will make them mini sized. If you would rather have them the traditional size then peek at this post for the temperature and timing.

Ninja Foodi Coconut Muffins

During the summertime if I go for a Hawaiian theme for a party I will make these little goodies with things like Pina Colada Dip too. If you wanted to make a glaze for the top like we did here you could with just powdered sugar and lemon juice or milk. Just enough liquid to thin it out to your liking. Drizzle and enjoy.

  • 1/2 c sugar
  • All purpose flour
  • 1/2 tsp baking soda
  • Baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 4 tbsp vegetable oil
  • Coconut milk
  • 4 tbsp butter melted, slightly cooled
  • Lemon juice is optional to enhance the coconut flavor
  • 1/2 c sweetened shredded coconut flakes

Air Fryer Muffin Tin

air fryer muffin pan for mini size is what was used. Kinda’ a size in between mini and regular is what I say. If you instead use individual muffin liners you will want them to made of silicone or another oven safe material of sorts. Paper muffin cups are NOT recommended for this type of baking.

You can use any sort of batter with these instructions really. We have made Banana Pineapple Muffins this same way with similar timing. Watch near the minimum timing as some machines run hotter than others.

Ninja Foodi Coconut Muffins

If you have this machine you just use the lid that IS attached and the air crisp button. That function works the same as a hot air machine. Easy dessert Ninja Foodi recipe y’all will love and your kids can get into the journey of mixing and filling the cups.

  • In a bowl mix dry ingredients like flour, baking powder and salt together (minus coconut) and set aside. Melt butter and set aside to cool but not harden.
  • In another bowl whisk together wet ingredients together.
  • Combine dry ingredients with wet to make a batter.
  • Fold in shredded coconut into the mix. Preheat air fryer to 320 for air fryer pan or 340 for individual silicone muffin cups for 5 minutes.
  • Pour muffin batter into a lightly sprayed mini air fryer muffin tin 3/4 of the way full.
  • Using air fryer muffin tin – Carefully lower into preheated basket at 320 F. basket and bake for about 12 minutes or until middle comes out clean and lightly browned on the top.
  • Will make about 20 mini in this pan.
  • Using silicone muffin cups – Preheat air fryer to 340 degrees F for 5 minutes. Place singular silicone muffin cups into basket, fill each one 3/4 of the way full. Cook for 12-14 minutes or until toothpick comes out clean in center

This is a great way to make a small batch at a time. Now the basket is small so if you want to use all the batter it will take several rounds. You can’t bake something like our White Chocolate Coconut Bundt Cake but could use it to make smaller bites instead.

How do you clean a silicone muffin pan?

It isn’t as easy as a metal version for sure. Some are dishwasher safe but look for instructions on the brand you used. Always wait until it has cooled completely first. Fill cups with soapy water and let sit in the sink for an hour or so. Use a bottle brush ideally to get every bit of crumbs out. We have additional tips below…..

How to Clean a Silicone Muffin Pan

Cleaning is generally straightforward. Follow these steps to effectively clean it after completing your muffin recipe and removing those;

  1. Allow this pan to cool down completely after use. This will prevent any damage to the silicone material and make it easier to clean.
  2. Before washing, remove any leftover crumbs or baked-on residue from the muffin cups. You can use a soft brush, a gentle scraping tool like a plastic spatula, or your fingers to do this. Be careful not to scratch the silicone.
  3. Fill a basin or your kitchen sink with warm soapy water. Use a mild dish soap and a soft sponge or cloth to gently wash the pan. Avoid using abrasive scrubbers or harsh chemicals, as they can damage the silicone.
  4. Rinse the pan thoroughly with clean, warm water to remove any soap residue.
  5. After washing and rinsing, pat the silicone muffin pan dry with a clean towel. Ensure that it is completely dry before storing it to prevent mold growth.
  6. Store in a cool, dry place. You can stack them, hang them, or place them flat in a cupboard.

Typically these are dishwasher safe, but frequent dishwasher use can reduce their lifespan over time. Check the manufacturer’s instructions for specific care guidelines.
