- 8 cups of bread cubes (use day-old or slightly dried bread, such as white, whole wheat, or a combination)
- 1/2 cup (1 stick) of unsalted butter
- 1 large onion, finely chopped
- 2-3 celery stalks, finely chopped
- 2-3 cloves of garlic, minced (optional)
- 2-3 cups of low-sodium chicken or vegetable broth
- 1-2 teaspoons of poultry seasoning (adjust to taste)
- Salt and pepper, to taste
- Fresh herbs (such as parsley, sage, thyme), chopped (optional)
Prepare Bread Cubes – Cut the bread into small cubes and spread them out on a baking sheet. Allow them to air dry for a few hours or overnight to slightly stale the bread. Alternatively, you can toast the cubes in a 300°F (150°C) oven for about 15-20 minutes until they are slightly crisp like our Sourdough Croutons.
- Sauté Vegetables in a large skillet or saucepan, melt the butter over medium heat.
- Add the finely chopped onion and celery. Sauté for 5-7 minutes, or until the vegetables become soft and translucent. If using garlic, add it in the last minute of sautéing.
- Season Vegetables by stirring in the poultry seasoning, salt, and pepper. Adjust the seasoning to your taste preferences.
- Combine Bread Cubes in a large mixing bowl with the sautéed vegetable mixture over the bread cubes and toss to combine.
