Baking sausage patties in the oven is quite easy. If you don’t want to dirty a skillet, or don’t have a stove this is how to cook ground sausage perfectly. Season minced meat or buy Jimmy Dean spicy sausage and form into a patty yourself. (affiliate links present)

Baking Sausage Patties in Oven

Ok so a while back we shared Sausage Patties in Air Fryer which were incredible but I get that not everyone loves cooking in a countertop appliance. Since we all have an oven, but not always a stovetop this may come in handy. Especially if you are baking other brunch items it’s an easy way to get it all done.

That is what we do if I am making a morning meal for a crowd. Pop in a tray of these as well as some Toast in the Oven and you’re set. You can fit a lot on a sheet pan so if you are having a holiday get together or sleepover with guests this is a quick way to cook a large batch of pork sausage.

Ok so this isn’t rocket science but if you have never done this then the first go around you’ll want the temperature and timing necessary. Since this is pork you will want to have a digital meat thermometer handy to ensure the insides reach a safe 160 degrees F before consuming.

There are other varieties out there, like Venison Sausage too but by far less common. Those need to reach the same temp, and if you mixed the two the same would be true. As for the size that is subjective, and the timing will vary accordingly. Larger will be thicker and take longer, as well as not getting as crispy.

If you ask me, if I make pork or Ground Turkey Patties, I love thin and smaller than palm sized so they get as crispy as possible. Most of the time people buy a tube that is already seasoned well. You’ll find maple, original and spicy varieties. If you want to add your own flavor to it you can find plain near the ground beef section.

How long do you cook sausage patties?

You are looking at 20-30 minutes in the oven. Timing will depend on the oven temperature, we recommend 350 but 400 would make it crispier and faster, and how thick each one is. In a skillet it would be faster over medium high heat, closer to 10 minutes until the center reaches 160 F.

This isn’t much different really than Baked Hamburger Patties except you wouldn’t want to add cheese to the top of these. Typically you’d make this for the beginning of the day too, but to each their own. I prefer lower and a bit slower vs. 400 degrees for less time to keep the insides as juicy as possible.

How to Cook Jimmy Dean Sausage Patties in the Oven

  • Preheat the oven to 350 F. In a bowl, mix minced meat, granulated or garlic powder and dried herbs of your choice.
  • If the minced meat does not contain salt, then add about 1/2 tsp. You can also add any spices to your taste.
  • Line a baking sheet with parchment paper or non stick aluminum foil and brush with olive oil.
  • Using wet hands, form into round patties about 3 inches in diameter.
  • Place on sheet in a single layer. Bake in the oven for 10 minutes cooking time.
  • Turn the patties over to the other side and bake for another 20 minutes until they are browned and crispy on the outside and until internal temperature reaches 160 degrees F.

After baking breakfast sausage patties this way you will likely want to make other versions. We have done this with other protein mixtures like fish, beef and this is How to Make Tuna Patties for lunch too. You can fit quite a few depending on how large your tray is. You do want one with a decent lip though to catch the grease so it doesn’t make a mess.

If you want them extra crispy, a pro tip for you is to set the meat on top of cooling racks on top of the sheet pan. That way the hot air can circulate around them and the grease can drip away, thru the grates below. You can use the drippings if you want to make Instant Pot Sausage Gravy later too!

Breakfast Sausage in Oven at 400

Breakfast sausage links don’t take quite as long. For those I do prefer 400 degrees F on a baking sheet for about 20 minutes total, flipping halfway thru. You may want longer to get a deeper browning and cook alongside Frozen Hashbrowns in Oven.

How to Cook Frozen Sausage Patties

Use a non-stick skillet, or add oil. Once hot, place the frozen sausage patties in a single layer in the skillet. Make sure there is enough space between each patty for even cooking. Cook for about 5-7 minutes on one side, then flip them over using tongs. Continue cooking for an additional 5-7 minutes, or until the patties are golden brown and cooked through.

You could also follow the recipe card except for the first half cover the top with foil. This way it will steam and start to defrost quicker so the insides will get to temp. Uncover for the other half so you can brown them and flip so both sides get crisp to them.

How do you cook sausage patties without drying them out?

Sausage cooked in the oven turns out perfect. Follow our step by step directions here to keep the insides tender and juicy but with a crispy exterior. Another method is in a skillet over low heat with a lid on to trap the heat. Once it reaches 160F turn the heat up to brown the outsides perfectly.

If you do have leftovers there are tons of things you can make with them. I crumble or chop it up and throw it into fried rice, a soup, into scrambled eggs or make Hot Rotel Sausage Dip with it. Keep them in freezer bags in the fridge for up to 3 days for best results. Reheat as is in air fryer if you don’t want to make something else with them.
