Converting Muffin Mix into a Cake

You may buy these boxes for breakfast, we do too, but you can use them to make this quick easy dessert recipe too. Leave naked or coat with frosting either homemade or grab a tub at the store to make this. Decorate with fresh fruit like we did here or enjoy as is.

All you need to transition this from muffins into a cake are two 8โ€ณ pans so you can layer them with some frosting or even pie filling in the middle of them. If you wanted one layer you could just use 1 box, for layered you will need 2 and this brand is best.

Ingredients for the perfect blueberry muffins are laid out on the countertop: a rich blend of muffin mix, fresh eggs, creamy milk, melted butter, a splash of vanilla extract, and a dusting of powdered sugarโ€”simple steps to creating a cake-like treat in muffin form.

Blueberry Muffin Cake Recipe

You are not going to follow the ingredients needed or directions on the back of the box, use my recipe card below. You will need to add just 3 ingredients with the dry mix to create cake batter. Fold in the drained cans of fruit at the end gently so they donโ€™t break apart.

Ingredients

  1. 17 โ€“ 18 oz. blueberry muffin mix (we have only used this brand)
  2. Milk or use a dairy free alternative like almond or cashew milk
  3. Melted butter or plant based alternative works too
  4. Eggs added at room temperature are best

Equipment Needed

Ideally you want two 8 inch round pans. I havenโ€™t tried 8ร—8โ€ณ square pans but I imagine that would work if you preferred that shape. I like having a cooling rack so they can be removed and not over-bake in the hot pans when done, a bowl, and youโ€™d want a cake plate to decorate and serve.

Variations

Now this brand does have a chocolate muffin type and a chocolate chip muffin variety you could use as well which would resemble more of our Brownie Cake with Brownie Mix creation we have made too (which was beyond wonderful too).

How to Bake a Cake with Muffin Mix

  • Preheat the oven to 350 degrees F. Spray two 8โ€ cake pans sprayed with cooking spray to prevent sticking.
  • In a large bowl, whisk together the milk, melted butter and eggs. Add in the dry ingredients (muffin mix) and stir to combine.
    • If using blueberry mix as shown, drain the cans of blueberries and rinse them well with cold water.
    • Use a spatula to gently fold in the berries until combined.
  • Divide the cake batter evenly between the two pans and place in the oven to bake for 35 minutes, or until a knife comes out mostly clean with moist crumbs attached.
  • Remove and let cool in the pans for about 10 minutes before turning the cakes out onto a cooling rack.
  • Once cooled place the first layer in the center of a cake stand or plate with the top facing up. Scoop about โ…“ to ยฝ c of frosting and spread in an even layer. Place the top layer with the top of the cake facing down if you want a flat top.
  • Spread the remaining frosting over the top and sides of the cake, decorate and serve.

This hack is a bit like when we made a batch of Cake Mix Blueberry Muffins. Used an unlikely box to make something you wouldnโ€™t expect from it initially but came out so fluffy and moist too.

  • 1 c butter, melted

  • Preheat the oven to 350 degrees F. Spray 2 โ€“ 8โ€ cake pans with cooking spray containing flour to prevent sticking. Set the pans aside.
  • In a large bowl, whisk together the milk, melted butter and eggs. Add in the dry muffin mix and stir to combine. If using blueberry mix as shown, drain the cans of blueberries and rinse them well with cold water. Use a spatula to gently fold in the berries until combined.
  • Divide the cake batter evenly between the two pans and place in the oven to bake for 35 minutes, or until a knife comes out mostly clean with moist crumbs attached. Remove and let cool in the pans for about 10 minutes before turning the cakes out onto a cooling rack.
  • To assemble the cake, once cooled, place the first layer in the center of a cake stand or plate. Scoop about โ…“ to ยฝ c of frosting and spread in an even layer. Place the top layer on top of that.
  • Spread the remaining frosting over the top and sides of the cake, scrape away most of the sides to create a minimally frosted cake. Take the remaining frosting and place in a piping bag and swirl frosting on top of the cake.

Notes

Tips

  • If you want a rounded top, put the first layer on the cake plate with the top facing down, frost middle, then the second layer should have the rounded top set on top of that.
  • If you want a flat top of the cake, set the first layer on the cake plate facing up with frosting on top of that with the top layer upside down so the top of the cake is flat.
