This is how to make a cake with blueberry muffin mix. You can bake a two tiered cake with 8 inch round cake pans instead of a muffin tin. Easy and pretty baking hack with Krusteaz blueberry muffin mix.

Isn’t this so pretty!! It is actually so easy to make too and nobody will be the wiser that it was meant to be a muffin recipe to begin with. A tweak like all of our cake mix hacks we love but with this box with canned blueberries. (affiliate links present)

You may buy these boxes for breakfast, we do too, but you can use them to make this quick easy dessert recipe too. Leave naked or coat with frosting either homemade or grab a tub at the store to make this. Decorate with fresh fruit like we did here or enjoy as is.

How to Turn Krusteaz Muffin Mix into a Cake

All you need to transition this box from muffins into a cake are two 8″ pans so you can layer them with some frosting or even pie filling in the middle of them. If you wanted one layer you could just use 1 box, for layered you will need 2 and this brand is best.

You are not going to follow the ingredients needed or directions on the back of the box, use my recipe card below. You will need to add just 3 ingredients with the dry mix to create cake batter. Fold in the drained cans of fruit at the end gently so they don’t break apart.

You are going to want two of the 17 – 18 oz. Krusteaz blueberry muffin mix boxes (we have only used this brand) to start with. You will not follow the directions on the box, instead below is How to Make Blueberry Muffin Mix Better

Can you use Jiffy muffin mix?

Yes, for Ninja Foodi cake you will combine 2 boxes Jiffy blueberry muffin mix, 2 large eggs, 3/4 cup milk. Mix and pour into a mini bundt pan, no foil. Then 1 cup water into the liner. Cook high pressure for 30 min with a 15 minutes natural release. In a round pan baked you could follow instructions below but with just one pan.

Add some whole or 2% Milk or use a dairy free alternative like almond or cashew milk to make the batter.

You’ll need some melted (and cooled slightly) butter or plant based alternative works into your bowl too. I prefer salted Kerrygold for best results.

Your large Eggs should ideally be whisked and added at room temperature. For the richest and moistest outcome choose organic free range.

Made with a Streusel Topping (option)

You could make our crumb topping for muffins and sprinkle that on top before baking to add a bit more sweetness, texture and prettiness. If you are frosting you may not want this, unless you just add to the top layer and frost the sides.

Ideally you want two 8 inch round pans. I haven’t tried 8×8″ square pans but I imagine that would work if you preferred that shape. I like having a cooling rack so they can be removed and not over-bake in the hot pans when done, a bowl, and you’d want a cake plate to decorate and serve.

How Long to Bake a Cake Made with Muffin Mix

Preheat the oven to 350 degrees F. Spray two 8” cake pans sprayed with cooking spray to prevent sticking. Divide the cake batter evenly between the two pans and place in the oven to bake for 35 minutes, or until a knife comes out mostly clean with moist crumbs attached.

This hack is a bit like when we made a batch of Cake Mix Blueberry Muffins. Used an unlikely box to make something you wouldn’t expect from it initially but came out so fluffy and moist too.

Chocolate Chip Muffin Mix Cake (option)

Krusteauz does have a chocolate muffin type and a chocolate chip muffin variety you could use as well which would resemble more of our Brownie Cake with Brownie Mix creation we have made too (which was beyond wonderful too). Use the same instructions, temp and timing below for this variety.

What can I add to boxed muffin mix to make it better?

Muffin mix add-ins are many as far as the batter is concerned. Mini chocolate chips are a fave for all. Chopped nuts work great, or even dried cranberries. For fresh fruit set them on a paper towel to dry and gently fold in so they don’t break and release juices.

Can you bake Krusteauz muffin mix in a cake pan?

Absolutely, we show you how to do that here. You can use a round or square 8 inch pan to bake a box of muffin mix instead of using a muffin tin. Use two boxes and see here how we layered the two into a cake, frosted and all!

How many boxes of muffin mix do you need to bake it into a cake?

Do you use the same ingredients to make a cake out of muffin mix?

Ideally you should use melted butter instead of oil and milk instead of water + 1 extra egg. Muffin Mix Cake Recipe

Equipment

  • 2 8 inch cake pans

Ingredients 

  • 2 boxes blueberry muffin mix, Krusteaz blueberry muffin mix boxes used and recommended
  • 1 1/3 cup milk, whole or 2% is best, or use a dairy free alternative
  • 1 cup butter, melted and cooled
  • 6 large eggs, at room temperature is best

Instructions 

  • Preheat the oven to 350 degrees F. Spray 2 – 8” cake pans with cooking spray containing flour to prevent sticking. Set the pans aside.
  • In a large bowl, whisk together the milk, melted butter and eggs. Add in the dry muffin mix and stir to combine. If using blueberry mix as shown, drain the cans of blueberries and rinse them well with cold water. Use a spatula to gently fold in the berries until combined.
  • Divide the cake batter evenly between the two pans and place in the oven to bake for 35 minutes, or until a knife comes out mostly clean with moist crumbs attached. Remove and let cool in the pans for about 10 minutes before turning the cakes out onto a cooling rack.
  • To assemble the cake, once cooled, place the first layer in the center of a cake stand or plate. Scoop about ⅓ to ½ c of frosting and spread in an even layer. Place the top layer on top of that.
  • Spread the remaining frosting over the top and sides of the cake, scrape away most of the sides to create a minimally frosted cake. Take the remaining frosting and place in a piping bag and swirl frosting on top of the cake.

Notes

Tips

  • If you want a rounded top, put the first layer on the cake plate with the top facing down, frost middle, then the second layer should have the rounded top set on top of that.
  • If you want a flat top of the cake, set the first layer on the cake plate facing up with frosting on top of that with the top layer upside down so the top of the cake is flat.
