Ok so you may have enjoyed a few of these at a party or bought at a bakery and wondered how your two favorite quick easy desserts were layered together. It is easy to do with boxed mix and refrigerated cookie dough or homemade.

What are Brookies?

Essentially the name is a combination of brownies and cookies, makes sense right?? You just layer the two, one on top of the other, and bake in the oven or however you would like. Typically chocolate chip dough is what is used but you could use whichever flavor you’d like.

There are a few options as far as this goes. You can start with both layers homemade, just one, or neither. The bake time doesn’t really change either way as long as it is the same thickness all the way across. The easiest is to use ready made dough and just make the batter as directed on the back of your brownie mix box but could amp one up like with our Black Bean Brownies with Mix recipe too.

Ingredient Notes

Using a store bought Box of brownie mix the easiest way to make these. What is the best brownie mix? You can use Pillsbury or store brands but Ghirardelli brookies are our favorite. I will say that you get what you pay for. It is worth it to buy a name brand with semi sweet chocolate chips inside to get that ooey gooey fudgy brownies texture to them if you ask me.

Can you make brownies without oil or eggs?

Yes!! There are egg substitutes out there in the case of an allergy, and instead of oil you can use things like Greek yogurt or applesauce. BUT I will tell you that the best alternative of all is to make our Brownies with Pumpkin instead!! I have made these with and without an egg, both are great. The only difference is that one is a bit fudgier but could be left out for sure.

Then pick up a full roll of refrigerated cookie dough is best, you can also use the type where you break off the squares. Can you use any flavor? Yes of course. Traditionally chocolate chip cookie dough is used but the timing won’t change in that regard. Use what you love. Peanut butter is a fun twist on things or use sugar cookie dough if you want to add sprinkles on the top to make it prettier.

This will fill a 9×13 baking dish well. If you use a smaller one it would take longer.

Whether you decide to mix together oil and eggs into the boxed brownie mix or make Brownies out of Cake Mix instead you will first want to prepare this bottom layer in one bowl. In another bowl you would prepare cookie dough if made from scratch and layer. Then bake for about 28 minutes or until the top is cracking, golden brown and the center no longer looks wet.

It doesn’t really matter but typically it is easier to make the cookie layer on the top because it is firmer. If using refrigerated dough you can just slice and place those over the brownie batter to cover and then you are ready to bake. Either way would work though!

How do you know when brookies are done?

These are best when they are just so slightly undercooked, but the middle is no longer raw. The best way to test this is to wait until the outsides are beginning to crack just a bit. Then test middle with a toothpick. You don’t want raw batter, but not dry either. Best is when there are moist crumbs attached to it, then allow to cool in the pan to stiffen up before slicing.

Equipment

Ingredients 

  • 1 box brownie mix, and ingredients to make batter
  • 1 package cookie dough, refrigerated squares or 1 roll sliced by you

Instructions 

  • Preheat oven to 350 degrees F. Spray 9×13" pan with non stick spray.
  • In a bowl mix together ingredients needed to make brownie batter. Pour this into your pan. (if making homemade cookie dough, make that in another bowl)
  • With squares of refrigerated cookie dough, break apart and press slightly flat with palms. Put on top of brownie batter to cover the top as much as possible. With a roll just slice into 1/2" pieces and cover the top that way. Homemade dough can be blobbed on and spread lightly with a spatula.
  • Bake in the oven for 25-30 minutes or until the middle no longer looks wet and outsides are cracking. Use a toothpick in center, as soon as no wet batter is attached pull it out.
  • Sit on a cooling rack for 15 minutes before slicing.

How Long to Cook Brookies in a Muffin Tin

Now this is another fun way to bake these in the oven, but smaller and faster. You just spray the inside of each hole. Bake for approx. 20-22 minutes at 350 degrees or until the middle no longer has wet batter attached to a toothpick inserted inside. Allow to cool in the pan for 15 minutes on a cooling rack before scooping out with a spoon to enjoy warm.

Air Fryer Method

You would want to use the directions for our Air Fryer Brownies for this. Just fill the small pan 1/3 full with the chocolate batter, with cookie dough on top so it is 2/3 of the way full. Baking time would remain the same. It is easy to check often by opening the drawer.

Can brookies be frozen?

Yes. Make sure they are completely cool before freezing. This prevents condensation, which can make them soggy. Cut them into individual portions for easier storage and serving. Wrap each piece tightly in plastic wrap or aluminum foil. This will help keep air out and preserve the texture and flavor. Then put these into a freezer bag and lay flat. Take out one at a time to thaw on your countertop for an hour or so and enjoy again and again!
