Hawaiian Roll Sliders Beef
We have been making buffalo chicken sliders for years, this time we wanted to go the beef route. We are going to start from the very beginning with this one. NO lunchmeat here y’all. I mean if that is all the time you have then by all means grab a package and we will walk you thru the steps of making the mini sandwiches that way.
Below we will explain how to make melt in your mouth roast beef. If you don’t want to heat up your entire house to get that part done you could alternatively use your pressure cooker or other appliance. Our air fryer roast instructions has been a hit and doesn’t take very long either. Take your pick.

Roast Beef Sliders with Caramelized Onions
Of course if you are using deli roast beef you could skip the first steps which take about an hour or so with cooling time and all. From scratch is always best but I get it, I do. If you have a lot of other things you are making for the big game day then that might be a way to make this faster for sure.
Ingredients
- 1.5-2 lb beef
- we used a Bottom Round Roast Beef
- 1/2 c beef broth
- Pinch of salt and pepper (garlic and onion powder are great too)
- 2 tbsp butter or non dairy product, or olive oil
- A few sprigs rosemary
- 1 tbsp olive oil
- Onion sliced if you want to caramelize and serve on top
- Brown sugar
- Small rolls and slices of cheese if you like like provolone, mozz. or Swiss cheese is great
- If you want a sauce, use mayo., dijon or our in a small bowl make some of our mustard dip, it is super yummy
Of course the toppings are totally optional and up to you. If you want to have the most fun with this, make a bar with ALL the things your guests can choose from. Some might like it simple with just cheese and (kids) like our sloppy joe sliders while others might like slices of pickles, a few sauces, coleslaw and more…..
How to Cook Beef for Sliders
- Preheat oven to 300 degrees F. Remove excess moisture from the beef, salt it and sprinkle with black pepper too. Melt the butter in a skillet and start frying the beef for 4-5 minutes on each side. Add 2 sprigs of rosemary.
- Put the roast beef in a baking dish, pour in the broth and put 2 more sprigs of rosemary if you like.
Roast for 20 minutes (or 12-15 minutes per pound). For the ideal medium rare, the temperature inside the beef must be between 115 F and 125 F. When done cover and set aside to rest for at least 15 minutes minimum. When ready remove the foil and slice against the grain.
Heat up the olive oil and start frying the slices of onion over medium heat. When the onion is slightly softened, add brown sugar and continue to cook until the onion is softened – another 7 minutes, stirring until the sauce thickens and gets a bit brown.
Is it Better to Slice Roast Beef Hot or Cold?
Ideally it is best to slice this beef after it has been cooled. To do this wait until it has cooled, keep covered with foil and refrigerate for 2 hours. Cold beef is easier to cut into thin slices for sure. Do so against the grain with a sharp knife of course.
How to Bake Sliders in the Oven
- To make baked roast beef slider sandwiches preheat the oven to 360 F. Cut the roast beef into thin slices. Put the bottom of the buns on the 9 x 13 baking dish, and put slices of roast beef on top of that.
- Top the roast beef with your cooked caramelized onions. Lay slices of mozzarella or provolone cheese on top of the onions.
- If you want to add some sort of sauce you could brush mayonnaise, dijon mustard or horseradish sauce over that.
Roast beef sliders with au jus
Top with the other half of the dinner rolls or slider buns. (you could brush melted butter mixture over the top with poppy seeds for prettiness) Bake in the oven at 350 degrees – 360 F. for about 10 minutes or until the cheese has melted and the buns are golden brown. Serve as is or with au jus on the side!
Once you make these you will want to try it with all sorts of other meats too. This is a great leftover ham recipe too for sure!! This is for about 6 pieces. If you had a larger crowd you could very easily double or even triple it. Just use a baking sheet instead of a pan to fit them all. Slice, fill with all the things, preheat the oven and bake until browned on top.
Open Faced Roast Beef Sandwich
You could skip the top row and just melt the cheese on the top if you wanted them to be open faced. This is not only a fun and unique way of serving them but lower carbs too since you just use one half of the buns, either way…delicious.
Air Fryer Sliders
If you don’t want to heat your whole house up you can use your countertop appliance!! You can cook 4-6 at a time with our air fryer sandwiches timing and cook to a golden brown too.
Can you make roast beef sliders ahead of time?
What if you have a lot going on, how can you prep these? You can prep this with all of the layers on a pan (without the sauce). Cover the top tightly with foil or plastic wrap keeping as much air out. Slide it into your fridge and then when you’re ready to bake take them out and set on the countertop to take the chill off while your oven preheats.
At this time you’ll want to add any spreads or horseradish sauce under the top buns. If you add it at the beginning the bread will get soggy so save that for right before you heat them. Time it accordingly since this will only take about 10 minutes. Bake until the cheese has melted and then serve on a trivet.
If you have leftovers of this roast beef sliders recipe let them cool completely and wrap tightly in plastic wrap. Keep in the fridge overnight and reheat the next day. Ideally if you stick them into an air fryer basket for a few minutes at 360 degrees the softened texture will be “fixed” and delicious once again for lunch.
