Roasted potatoes are great. You can spread them on a sheet pan and slide them in with your main dish so they bake at the same time. With a crispy exterior and tender middle you get both desired textures all in one. Drizzled with olive oil or balsamic vinegar adds even more flavor!

Ingredients

  • 4-5 medium purple sweet potatoes, peeled and cubed
  • Cumin and turmeric
  • We like a bit of chili powder
  • Salt or other seasonings
  • Olive oil to keep them moist 

Equipment Needed

You are going to need a vegetable peeler first off, those arenโ€™t pleasant to eat. A sharp knife and cutting board are necessary to cube into bite-size pieces. Then you will want a bowl to toss with a bit of oil and seasonings. Last but not least a baking sheet to cook them in the oven until fork tender.

Variations and Substitutions

Seasonings are of course up to you so use your favorites. You will want to coat the outsides with oil, olive is typical but avocado oil is my second favorite choice with good fats. When done I like to drizzle on a bit more wow with more oil to moisten or balsamic vinegar is even better!!

How to Cook Purple Sweet Potatoes in the Oven

  • Preheat the oven to 425 F.
  • Line a baking tray with foil for easy cleanup and set aside.
  • Peel and cube potatoes into about 1-2โ€ in size.
  • Place in a large bowl.
  • Sprinkle with seasonings such as; cumin, turmeric, chili powder and salt.
  • Drizzle on olive oil and stir to coat each piece of potato evenly.

If you want to serve a really fun meal you could make sauteed red cabbage to go with this!! Talk about a meal you can talk about the next day, is vegetarian and savory delish. For a meat duo I would go with something that can be baked at the same temperature and similar cook time.

How to save leftovers

As with every other food you need to allow them to cool completely first. Transfer into a Tupperware container with a sealed lid. Keep in the fridge for up to 3 days and then reheat on a plate in a single layer with a bit more oil drizzled on top to moisten up.
