This is how to make boxed blueberry muffin mix better! We will share a few blueberry muffin mix hacks using Krusteaz (the best) or Jiffy to make them bakery style, fluffy and super moist.

Ok so I grew up with boxed blueberry muffins made on Sundays by my mom. She always made it the “normal way” using the ingredients on the back of the box and never thought twice about it. Hacks back in the day were not a thing…..but they are now…..

I will tell you that if you have only used Jiffy I highly recommend that you transition to Krusteaz as it is SO much better!! Instead of just dried blueberries you get a can of them with more tender fruit and juice that you will use to make batter that much better.

For many years I too made this one as they told me on the back, until a few years ago. My mom gave me the first trick which is to use the blueberry juice in the batter and I took it from there to change two other things to make bakery like muffins your guests will love.

How to Make Blueberry Muffin Mix Better

Use the blueberry juice as part of the necessary liquid. Meaning, open the can 3/4 of the way open and pour the juice from that can into your measuring cup. Then fill up to the 2/3 cup line with water (or you can use milk – but note that milk will make them not rise as high).

You should mix together the necessary liquid, oil and eggs (I recommend to use organic free range eggs for the richest, moistest outcome of all) to make the batter first. You do not want to add delicate items until the end so they don’t break apart.

Then ideally you will want to add frozen blueberries (or fresh) into the bottom of each muffin hole. I like to use paper liners for an easier cleanup of the pan but you could spray with non stick spray instead if you preferred.

And you should bake at a lower temperature than recommended on the box. For Krusteaz they say to bake at 400 which is way too high and will dry them out. Instead set to 350 degrees F for a bit longer. They won’t rise quite as high but so worth it to create the moistest regular or Blueberry Muffin Tops.

Can you add a crumb topping?

You could actually mix together our crumb topping for muffins in a small dish. Sprinkle on to the top before baking as directed below. This will add a bit more sweetness, texture and make them prettier.

How to Make Betty Crocker Blueberry Muffin Mix Better

Both this brand and Krusteaz require almost the same ingredients and tweaks except this brand only needs 1/3 cup of oil vs. 2/3. You still get the can of blueberries and will use the juice first before adding rest of 2/3 cup of water or milk.

How to Make Krusteaz Blueberry Muffin Mix

Directions above are specific to this box because it comes with canned blueberries in the box, and you want to include that juice, others don’t. If you were using this brand of chocolate chip muffin mix you would skip that suggestion but use the others as far as a lower temp. and including organic eggs for the richness.

How to Make Jiffy Blueberry Muffin Mix Better

First off this box is smaller and generally makes 6 muffins instead of 12. The fruit is dried so the end result isn’t as moist, period, no matter what you do. There are tweaks you can make though as far as using whole milk for the necessary liquid, an organic egg for richness and check at the minimum bake time so they don’t dry out.

How Long to Bake Boxed Blueberry Muffins

In this case I bumped the oven temperature down a bit for the ideal tenderness so you will need 19 minutes exactly to make them perfect!! This is for the normal size. In the case of Jumbo Blueberry Muffins you would need closer to 22 minutes.

The quickest option would be to know how long to bake mini muffins which is closer to 10 minutes since they are so small.

Best Temperature to Bake Blueberry Muffins

In my testing over and over again it was best to bake at 350 degrees Fahrenheit for about a minute longer. Lower and slower will yield the moistest outcome ever. I will say that they won’t rise as high (a very slight difference) but in the end the texture is key to their success so it’s worth it.

Blueberry Muffin Mix Hack

Equipment

Ingredients 

  • 1 box blueberry muffin mix, Krusteaz used and recommended
  • 2 large eggs, organic recommended
  • 2/3 cup water, drain blueberry juice in measuring cup first, then fill to 2/3 line with water
  • 2/3 cup vegetable oil
  • 48 large frozen blueberries, 4 each for bottom of each muffin

Instructions 

  • Preheat oven to 350 degrees F. Line muffin tin with paper muffin liners.
  • Mix together muffin mix, eggs and vegetable oil in a bowl.
  • Then open can of blueberries and drain the juice from that can into your measuring cup. Then fill the rest of the measuring cup up to 2/3 with water and add that into your bowl, mix.
  • When you have a smooth batter, dump in the blueberries from the can and gently fold together.
  • Put 4 frozen blueberries (fresh could be used) in the bottom of each muffin liner. Fill each with muffin batter on top of that 3/4 of the way full.
  • Bake in preheated oven for 19 minutes or until the top springs back when touched gently in the center.
  • Remove from hot muffin pan immediately and set on a cooling rack to cool so they stay as moist as possible.

Notes

Betty Crocker Blueberry Muffin Mix Hack

You will use the same ingredients and hacks above EXCEPT that you only use 1/3 cup oil vs. 2/3 that Krusteaz requires. You still get the can of blueberries to add at the end and use the juice in that can before filling rest of measuring cup with water.

Jiffy Blueberry Muffin Mix Hack

If you would rather use Jiffy, use whole milk (or at least 2%) + necessary egg + an added 1 tbsp greek yogurt + 4 frozen blueberries to the bottom of each muffin cup as directed above before spooning in your batter.
