  • 1 c. raw Mexican chorizo 1/6 lb. was used per batch

How to Make Chorizo and Egg Breakfast Burritos

Warm the Tortilla to make it more pliable. You can heat it in a dry skillet over medium heat for about 20-30 seconds on each side, or microwave it for 15-20 seconds.

Add the Filling in the center, slightly closer to one edge (leaving about 2-3 inches of space at the edge). Ingredients 

  • 1 c chorizo, 1/6 lb. was used per batch
  • 3 eggs
  • salt and pepper, to taste

Instructions 

  • Grease a small skillet with nonstick cooking spray. Add chorizo to the skillet, break up into small pieces and cook over medium heat, for about 5 minutes.
  • Push sausage to the outside of the skillet. Beat together eggs in a bowl and add a pinch of salt. Pour eggs into the center of the skillet and heat for 2-3 minutes, scrambling eggs until cooked. Remove from heat.
  • Enjoy or make breakfast burritos; Divide egg and sausage mixture into thirds. Add one third of the mixture to the center of a warm tortilla. Top with cheese and salsa and roll tightly into a burrito. Repeat until you have 3 burritos.
