Oh how I love quick and easy casseroles! Use your favorite meat, cheese, seasoning, and some bread and how can you go wrong really?? This throw together chicken bacon ranch bake is just that. Packed with flavor, and biscuits too! Of course it’s loaded with cheese too, and some mild chiles to give it just a little bit of a kick and you have yourself a great dinner that everyone will love. No need to serve it with any side dishes as it’s a complete meal in of itself. My youngest daughter’s favorite casserole because it’s packed with chicken (go figure, she loves the stuff). Here’s the easy recipe so you can make it yourself next week!

Casseroles to me are kinda’ throw together meals. A way to use what you have around the house and create a warm feel good comfort food for dinner, or lunch. I usually have everything I need for this recipe in the cupboards and fridge.

Chicken Bacon Ranch Bake with Refrigerated Biscuits

Makes it an easy go to meal when I need something quick that I know nobody will complain about. With 3 kids and a picky husband that isn’t always easy. We eat a lot of easy chicken recipes so either I have a few breasts I need to use, or you can use rotisserie chicken in this which gives it even more flavor.

Mix it all up and throw it in my casserole dish  (that comes with a lid, perfect to store the leftovers) and you’re done. Here’s how you make it.

Of course with any recipe you can omit what you don’t care for. If y’all don’t like the green onions or chiles just leave out, but they really do add a bit of added flavor to this chicken casserole. It isn’t spicy at all. I use the butter Grands biscuits myself and with the 2 left over that I don’t use to mix in with my other ingredients I just pop them in the oven at the same time and they get eaten on the side.

Chicken Bacon Ranch Bake

This chicken bacon ranch bake is one of my kids’ favorite casseroles. Using refrigerated biscuits to hold it together it’s packed with flavor and cheese!

Ingredients 

  • 2 chicken breasts, precooked and diced
  • 1 c sour cream
  • 1 can cream of chicken soup
  • 1 c cheddar cheese, shredded
  • 2 tbsp bacon bits
  • 1 can green chiles, 4 oz.
  • 1 can refrigerated biscuits, Grands use only 6, cut into 8ths, regular size cut into 4ths
  • 2 fresh green onions, diced
  • 1 tbsp powdered ranch dressing mix

Instructions 

  • Add all your ingredients into a bowl and mix well, add cut up biscuits at the end. Spray a 9×12″ casserole dish with non stick spray and pour mixture inside. Spread out in pan evenly. Bake at 350 degrees for about 25 minutes or until biscuits that peek out at top turn light brown. Serve!
