This sponge avocado cake in a loaf pan is delicious. With a rich dense texture that melts in your mouth, sweetness inside and out it has gone crazy lately on social media. It is easy to make with ripe fruit and a few other baking ingredients. Served as a snack or treat after dinner it is family friendly and yummy. (affiliate links present)

Avocados can be a great ingredient to use in baking because of their rich and creamy texture. They are sometimes even used as a substitute for butter or oil in baked goods to make them healthier, spongier, and more nutrient dense.

When baking with avocados, it’s important to remember that it has a strong flavor so it may not work well in all recipes. Start by using a small amount as a substitute for oil, bake, taste when done, and adjust the recipe from there if you want to use more the next go around. They can oxidize quickly too when exposed to air, so it’s best to use them immediately once cut to avoid discoloration.

Are avocados fruits or vegetables?

Let’s talk about the main ingredient for a quick second shall we?? Technically they are fruits, specifically a type of berry. Fruits are defined as a flowering plant containing seeds. They do fit this definition because they are the fruit of the tree they fall off of with a seed (pit) in the center.

When cooked with though are often considered a vegetable due to their savory flavor and are usually used in savory dishes like guacamole and salads. Most fruits are typically consumed as a sweet dessert or snack, so it becomes confusing. For this we are going to use;

Ingredients

  • 2 c all purpose flour and baking powder
  • Sugar will bring a sweetness
  • Salt actually makes it taste more sweet
  • 1/4 c lemon juice will help maintain the bright green color
  • Milk or dairy choice
  • Avocados – 1 large or 2 small, ripe and soft inside
  • Vegetable oil I use
  • 1/4 tsp vanilla extract is optional

Powdered sugar glaze

  • Powdered sugar
  • Butter melted
  • A bit of lemon juice if you want it milder, use water or milk to thin

This was made using this 10 x 4.5″ loaf pan which is a bit skinnier than the typical 9×5″ but that could be used as well.

Variations

I haven’t yet tried this in cupcakes or muffins but think it would work, baking much quicker, closer to 18 minutes or until the top springs back when touched gently in the center. This is how long to bake mini muffins if you wanted a quick bake time.

Want to make a sort of chocolate avocado cake? You could make a cocoa frosting instead of the simple one with confectioners sugar.

If you needed a dairy free alternative, lactose free milk is better than almond variety but choose whichever you prefer.

I do not know how gluten free flour would do to the baking time on this one but if you work with it and figure it out please share below for others.

How to Bake a Cake with Mashed Avocado

  • In a bowl add milk and lemon juice together, let sit for 3 minutes (this will make buttermilk).
  • Mash and add ripe avocado, and vegetable oil into the mixture.
  • Use a mixer on low to blend until smooth, or use a whisk.
  • Use a mixer on low or food processor to blend until smooth, or use a whisk.
  • In another bowl whisk together dry ingredients.
  • Slowly incorporate into the avocado mix until you get a batter.
  • Preheat oven to 350 degrees F.
  • Spray inside of loaf pan with non stick spray or line with parchment paper.
  • Pour batter into the prepared pan.
  • Bake in a preheated oven for about 50 minutes
    • Or until a toothpick or knife inserted in the center of the cake comes out with moist crumbs attached.
    • I like to test with gently touching the center, if it springs back it is done rather than a toothpick inserted as sometimes it can get too dry that way.
    • Do not overbake.
  • Remove and set on a cooling rack for 10 minutes in pan. Then use a knife to loosen cake all the way around the pan and use a pot holder to gently flip over and then on to cooling rack out of the pan to continue cooling.
  • Whisk together glaze ingredients until smooth and pour over the top if you would like to add this.

Of course I am sure you have made tons of things like making avocado toast in the mornings but there are many fun finger foods that your kids will love with these sliced! With a light breading you can get the outsides crispy by baking air fryer avocado fries out of them. Sweeter though the options are endless.

What does avocado substitute in baking?

  1. Butter or Oil can be cut out and you can use avocado mash instead 1:1 ratio
  2. Eggs, instead you can add 1/4 cup mashed to make your treat egg-free
  3. Cream or yogurt can be added with the same amount needed in your recipe as a healthier alternative.

Other Desserts with Mashed Avocado You’ll Love

  1. Avocado brownies is a fun way to make the ordinary extra fudgy and moist.
    • You can mash the avocado and add it to the batter along with other ingredients like cocoa powder, flour, sugar, and eggs.
  2. Chocolate chip cookies can be made with this when you replace some or all of the butter with mashed avocados. The result will be a softer and chewier cookie with a unique flavor.
  3. Avocado banana bread bundt cake should be tried with using some of these mashed in place of oil or butter. Adding extra moisture and a creamy texture, you will get a duo of flavors with both of these fruits used.

Why is my avocado cake bitter?

Avocados that aren’t ripe enough can have a bitter taste, which can transfer to the cake. Overripe on the other hand, may have started to go rancid, adding bitterness as well. Always use ripe, fresh, with a mild buttery taste for baking. Sometimes, low-quality or expired ingredients (like old flour or oils) can add a bitter taste to baked goods too.
