Ok so y’all know that I love easy Crockpot recipes. It is not just great for main dishes though. If you have never used one to make side dishes you are in for a great surprise. Especially during the holidays when you have no room in the oven this is the best way to cook sliced baby potatoes in a creamy sauce.

We started by sharing our recipe for cheesy hashbrown potatoes Crockpot style years ago but wanted more of a homemade variation in this go around. I used petite yukon bold and red potatoes mixture but if you wanted russets the directions would be the same.

I have tried all different sizes, shapes and thicknesses and this one seems to work out the best. Whole is just too much for one serving if you ask me, diced falls apart too easily, but slices seem to result in the best texture and ease to eat. 😉

Ingredient Notes

You are going to want to pick up some potatoes. The reason I use petite (or baby as some may call them) is so that I can just slice each into about 4 pieces and be done. For the larger versions you’d need to cut in half lengthwise and then slice.

To add flavor and some dehydrated onions into the mix it is easiest to just dump a packet of dry onion soup mix in there. It is complete with all the seasonings you will need so nothing else from your spice cabinet is really needed.

To make them creamy you’ll want some melted butter, olive oil as well as some half and half to make that.

Can you add onions?

You could certainly dice up a fresh yellow or white onion and add that in there too. They will soften nicely and give you a bit more texture if you like. Sliced onions would not break down as easily.

Can you add ham?

You certainly could add some diced up and precooked meat. For Crockpot Ham and Potatoes I would add those pieces at the beginning so they can get tender and soak up the sauce. With bacon bits I would add those on top after adding the half and half or they will get too soft in my opinion.

Can you add cheese?

For sure you could. I wouldn’t add this to the top until the last 30 minutes or so. You would need just long enough for it to melt. Or you could just sprinkle some shredded cheddar on the top of each serving though that won’t melt that well.

How thick should you slice the potatoes?

I tried this a few times to determine the best thickness for this recipe. By far the best was 3/4 inch thick. You can see above in the photo what that looks like. Yes the ends will be a bit smaller overall but that is ok. Just stick to that measurement for the best results.

Can you leave the baby potatoes whole?

You could but you would need to increase the cook time by 30 minutes or so. I have done this and it is successful however not as easy to eat for sure. You’ll need to serve with sharp knives so everyone can cut them into fourths or so to eat when done. I prefer to do this at the beginning so it is easier for everyone to eat.

How Long to Cook Sliced Potatoes in Slow Cooker

You have the choice of 3-4 hours on low or 2 – 2.5 hours on high. In general I always suggest the low setting. The end result when using a lower temperature for longer is a more tender one with more flavor.

How do you know when they are done?

It is all about texture and tenderness as far as these go. Use a fork and press into one of the middle slices. If it takes any effort to slide inside then it needs more time. Cover and cook for another 20 minutes or so and check again. You want it to slide in super easy to tell you they are ready to be served.

Slow Cooker Potatoes Recipe

Equipment

  • 1 slow cooker
  • 1 knife
  • 1 cutting board

Ingredients 

  • 2 pounds potatoes, baby potatoes, red and Yukon gold used and sliced into 3/4" slices
  • 1/4 cup olive oil
  • 1/4 cup butter, melted
  • 1 packet onion soup mix, 1 ounce
  • 1 cup half and half

Instructions 

  • Rinse, dry, and slice potatoes into 3/4" slices. Leave the skins on so they stay together better. Add into slow cooker, spread out into an even layer.
  • In a small bowl, combine olive oil, melted butter, half and half and onion soup mix and whisk until combined well. Pour on top of potatoes and toss to coat.
  • Cover and cook on low for 3-4 hours on low or high 2 to 2-1/2 hours, stirring 1 hour after start time. If you want to melt shredded cheese on top add the last 30 minutes. Enjoy when they are fork tender.
  • Let stand for 10 minutes before serving.
