Sugar Cookies Made With Pancake Mix

There are lots of variations and add-ins you can fold into the batter once the basics are creamed together. Just like other cookies you need to get the butter and sugars mixed and then the egg and dry ingredient make it all happen.

What can you add to a basic cookie dough? I mean the list goes on and on but the most popular choices would be chocolate or peanut butter chips, crushed nuts or maybe some colorful M&Ms like we did with our Monster Cookie Bars From Cake Mix. This time we are baking on a sheet pan in rounds so we can enjoy them on the go. 😉

Ingredients for a baking recipe are laid out on a counter: a box of pancake mix perfect for cookies, a bowl of brown sugar, chocolate chips, two sticks of butter, vanilla extract in a small cup, white sugar in another bowl, and one egg.

  • Softened butter is typical
  • Granulated white sugar
  • And you will need some light brown sugar
  • An egg at room temperature is best
  • Vanilla extract, or almond is actually delicious too
  • Buttermilk pancake mix where you only add water to make batter
  • And we added mini chocolate chips

How to Make Pancake Mix Cookies

Step 1 – Smooth and combine the ingredients; in a large bowl, beat the butter, sugar, and brown sugar together until light and fluffy. Add in the egg and vanilla and continue to beat. Add in the pancake mix until combined. Stir in the chocolate chips.

Step 2Chill the dough in a covered bowl in the fridge for 30 – 45 minutes to stiffen.

Step 3Preheat the oven to 350 degrees. Line baking sheet with parchment paper

Step 4Scoop the dough into 1 ½ Tbsp sized balls and place on a baking tray about 2-3” apart.

Step 5Bake for 9-11 minutes, just until the edges start to turn golden.

Is Bisquick the same as pancake mix?

Yes and no. You need to add milk and eggs to make the batter whereas others such as this brand only requires water. I would say that the big yellow box is more often used to make savory recipes like biscuits but yes it could be substituted with a slight difference. Yes and no. It isn’t like if you skipped this step they wouldn’t be good, but the texture would be off. The reason that recipes call for this 30-60 minute chill time is so that it stiffens up a bit. This is important so it takes more time to heat up, spread and will ultimately stay a bit thicker and not as flat.

How to you make cookies fluffy instead of flat?

1. Use Room Temperature Butter helps trap air as you cream it with sugar, which gives cookies a lighter texture.
2. Don’t Over-Cream Butter and Sugar because this can actually make cookies spread more by creating too much air, causing the them to collapse when baking. Aim for a light, fluffy mixture.
3. Add an Extra Egg Yolk if you want an extra rich structure, which can make the end result softer and thicker.
4. Chill the Dough for at least 30 minutes before baking helps solidify the butter and keeps cookies from spreading too much in the oven.
5. Avoid Overmixing the Flour because more time increases the gluten, which can make them tougher and flatter. Mix just until combined.
6. Use a Higher Ratio of Brown Sugar to White Sugar: Brown sugar adds moisture, making a softer and thicker result.
7. Increase the Oven Temperature to 375F instead of 350 can help cookies puff up faster, giving them less time to spread.

Can you substitute pancake mix for flour in cookies?

Yes, you can substitute pancake mix for flour in cookies, at a 1:1 ratio to start, then adjust as needed depending on the dough’s consistency but there are a few things to keep in mind;
1. Omit or reduce any additional leavening agents like baking powder or baking soda.
2. If you’re using a sweetened pancake mix, reduce the sugar in the recipe slightly
3. You may notice a slightly cakier texture because of the change.

What is the best pancake mix?

When selecting a mix, consider what aspects are most important to you, such as flavor, texture, nutritional content, dietary restrictions and price to find the perfect match. Overall Bisquick, Kodiak and Krusteaz are the most popular brands though.

Equipment

Ingredients 

  • 3/4 c butter, softened
  • 1/2 c sugar
  • 1/2 c brown sugar
  • 1 egg
  • 1.5 tsp vanilla
  • 2 c pancake mix, one where only water needs to be added to make batter
  • 3/4 c mini chocolate chips

Instructions 

  • In a large bowl, beat the butter, sugar, and brown sugar together until light and fluffy. Add in the egg and vanilla and continue to beat. Add in the pancake mix until combined. Stir in the chocolate chips. Chill the dough in a covered bowl in the fridge for 30 – 45 minutes to stiffen.
  • Preheat the oven to 350 degrees. Scoop the cookie dough into 1 ½ Tbsp sized balls and place on a baking tray about 2-3” apart.
  • Bake for 9-11 minutes, just until the edges start to turn golden. Remove and place cookies on a cooling rack to bring to room temperature.

Notes

Chewy cookies

Only bake 9 minutes (depending on size) until the outsides start cracking and middle no longer looks wet but still looks a bit underdone. Remove pan and set pan on cooling rack. Allow to cool completely on hot pan before removing.

Crunchy cookies

Bake for 11 minutes until entire top is cracking and golden brown. Cool on pan for 5 minutes, then transfer to cooling rack.
