Are carrot and cucumber a good combination?

Yes!! These two with vibrant colors and crunch taste great with bottled Italian dressing or homemade like directed below. You could even add other shredded vegetables like adding this together with our Cabbage Salad with Asian Dressing for another great combination.

If you really want to use Wishbone or Olive Garden’s bottled dressing go right ahead. In a pinch I will do the same thing but from scratch is super easy and you can then adjust from there according to your tastebuds. Want it a bit spicy? Add a sprinkle of red pepper flakes or dry Sriracha.

Ingredients

  • 2 large shredded carrots or julienned
  • English cucumber, thinly sliced
  • Some red onion chopped
  • A bit of olive oil
  • Fresh is alway best but could use bottled Lemon juice or rice vinegar
  • 1 tsp honey to give it a bit of sweetness
  • Salt and pepper to taste

You can make as is or if you want it more coated it could be doubled easily. Toss to coat with half and have the rest available for more on the top of each serving with sesame seeds. Whisk in a small bowl or even better, shake in a mason jar so you can save the rest if not used up right away in the fridge.

Can you eat cucumber and carrot salad for weight loss?

You could, but everything in moderation I always say. You wouldn’t want to just eat this without anything else. To cut down on the calories you could opt for a light vinaigrette or lemon juice instead of high-calorie dressings. Are vegetables better eaten raw or cooked?

Whether the taste better is subjective to whom you’re asking. Nutrition wise they always have more vitamins left in their raw form. You will lose nutrients when cooked, steaming maintains most of them and boiling is the worst for leaching them out.

Should you remove the skin of cucumber before eating it?

That is up to you and what you are making. Most tend to peel half of it off so it stays firmer but isn’t as tough with all of it in tact. If you want a smooth texture to your dish then I would take it all off with a vegetable peeler. If frying I’d leave it on so it stays firmer.

  • 1 vegetable peeler

Ingredients 

  • 2 large carrots, peeled and grated or julienned
  • 1 cucumber, English variety, thinly sliced
  • 1/4 c red onion, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • salt and pepper, to taste

Instructions 

  • In a large bowl, combine the julienned carrots, sliced cucumber, chopped red onion, and fresh parsley.
