Simple Mississippi pot roast recipe with chuck roast came about after our Mississippi Pork Roast was wildly popular! Beef roasted in the oven tender enough to shred with peperoncini peppers is great served over mashed potatoes for dinner.
We have made this delicious dish many ways, we share all the cooking methods below. Focusing on roasting in oven below, this is an Old Fashioned dish with few ingredients that has been enjoyed for years. (affiliate links present)
Mississippi Roast in the Oven
When it comes to large thick pieces of meat you want a bold sauce to go with it. Better yet, cooked in it low and slow will give you the ultimate flavors you want. I have made this with a few different cuts. Chuck roast is featured here but Sirloin Tip Roast is delicious as well. ๐
You can see the 6 ingredients needed below. If you have never used pepperoncinis you are in for a real treat. Not only are the peppers full of flavor but the liquid is amazing too. To make a bolder sauce use it in place of the broth and add more diced on top of your meat before baking.
Ingredients
- 2.5-3 pounds chuck roast is the best cut of meat for this
- 1 packet Ranch seasoning adds a pop of flavor youโll love, it is different from the bottled dressing
- Dry au jus mix gravy mix comes in a packet and used to thicken the sauce
- Beef broth, or use pepperoncini juice instead
- Pepperoncini peppers left whole ideally
- Stick of butter sliced into pieces and added to the top of the roast for flavor and moisture
with Frozen Roast
You would need to follow the directions in our slow cooker frozen roast if it is not defrosted. Use the same sauce as below but the timing above so it comes out fork-tender and delicious. It is possible though!!
Substitutions
I have in fact made this as an Arm Roast Recipe too. I will say that this cut has a stronger beef flavor though but marbled with fat so it is my second favorite choice if you need a substitute. For a dairy free alternative you can certainly use a vegan plant based stick for the butter (Country Crock has a great one we have used in the past).
How to Cook Mississippi Roast
Step 1 โ Start to prepare your roast by sprinkling your seasonings on the top. You will not need anything beyond the ranch dressing mix and au jus.
Step 2 โ Add beef broth or liquid of your choice to the pan so it can steam to allow the connective tissues to break down, this will make it as tender as possible. Add pats of butter and peppers for flavor and moisture.
Step 3 โ Then in order to really trap the heat you want to really cover the top tightly with aluminum foil and bake until it is soft enough for you to shred the meat really easily with forks in each hand.
in Crock pot
If you wanted to make this low and slow you can follow directions for our Mississippi Roast Slow Cooker here. The prep time remains the same basically but the cooking time is longer. If leaving for the day it is a nice alternative to just set it and go, able to enjoy your meal when you get home.
on the Stove
If it is a really hot time of year you can actually make this as a Stove Top Pot Roast instead. I suggest using a Dutch Oven in this case (you could use it in the oven too) because it creates a nice even heat for everything inside.
in Pressure Cooker

I will say that using high pressure will allow you to get the same end result but much faster. With that said you could use a fresh or frozen piece of meat in this case and the cooking time really doesnโt change.
What to do with Leftover Pot Roast
Whether you use chuck or a Cross Rib Roast you will likely have at least one serving left, unless you have a really large family. I hate wasting so I always want a few choices of what to do with it the next 1-3 days. It will dry out a bit in the fridge so you want to add moisture, cooked in some sort of sauce is best.
Almost always what I will do with this is to chop up what is left and make our 5 ingredient chili with it. Seriously all you need beyond this is a can of diced tomatoes, canned beans, a bit of tomato sauce and a packet of seasoning to make. Throwing into a casserole is another win with noodles and diced veggies. Makes a whole new meal with very little cost!
Mississippi Pot Roast Recipe
Equipment
- aluminum foil
Ingredients
- 2.5-3 pounds chuck roast
- 1 packet Ranch dressing mix, dry, 1 oz.
- 1 packet au jus mix, dry, 1 oz.
- 1/2 c beef broth, or use pepperoncini juice
- 5 peperoncini peppers, whole
- 1 stick butter, 1/2 cup
Instructions
- Preheat oven to 350 and place beef roast into a baking dish. Sprinkle dry ranch dressing on the top, followed by the dry au jus mix. Add beef broth to the pan around the meat. Top roast with pats of butter and peppers.
- Cover tightly with foil and roast for 3 to 3-1/2 hours or until a thermometer inserted in the center registers 145 degrees F. and it pulls apart easily with a fork.
- Remove from oven and let stand for 5 minutes. Use a fork to shred apart the large pieces of the beef if desired.
