Our easy copycat KFC chicken pot pie recipe is the best way to make mini individual dinners topped with puff pastry! So light and delicious packed with potatoes, vegetables and meat all in one bite. Your family is going to go crazy over these.

In order to make things easy peasy we used frozen dough instead of our homemade pot pie crust, but that could be used instead. Either way these “baby pies” are my kids’ favorite meals that I have been making for years.

We used to pull thru the drive thru a few times a week and buy these for dinner but that got pricey and as time went on not every KFC had them. ;( SO it was time to come up with our own copycat version which we are sharing with you here!!

They really are almost identical to our ever so popular Chicken Pot Pie Recipe with Cream of Chicken Soup recipe except for the size. But especially when you are feeding little ones, sometimes “it is so cute” just makes it taste that much more delicious right??!!

Ingredients for a delicious Chicken Pot Pie Recipe: potatoes, mixed veggies, milk, cream of chicken soup, cooked chicken, and puff pastry sheets—just like the classic KFC Chicken Pot Pie!.

Ingredient Notes

As far as the crust is concerned there are actually quite a few options including making a smaller version of our Chicken Pot Pie with Red Lobster Biscuits but puff pastry is so light and we love it. You can find it frozen and just thaw on the counter as you are prepping everything else.

Can you use biscuits on top?

You could use refrigerated biscuits, the flaky Southern style are best suited as they have layers and are lighter in texture. I would use Grands and roll out so they cover the top. You could alternatively use other doughs like our Bisquick pot pie.

For the meat let’s talk about the options here as well shall we? If you are looking for a leftover chicken breast recipe this is a great one. You could cook 1-2 breasts and dice up or grab a rotisserie chicken and use that!

Vegetables are a given in this comfort food and using frozen vegetables just makes things easier. Ours were mixed peas and carrots but the variety with corn and green beans would work well too.

If you want to add more like we did here with something like cubed potatoes you have to go a step further and boil them first. There isn’t enough time to cook them to tender with everything else but it is a great add in if you have some time.

And for the creaminess just throw in a can of cream of chicken condensed soup. Cream of mushroom would work as an alternative if you preferred those flavors.

How Long to Cook Chicken Pot Pie KFC Copycat Recipe

If you want to add diced up fresh potatoes it will take you about 15 minutes to boil those to tender first. Alternatively you can leave those out or use canned potatoes and cut up instead. Beyond that it only takes about 20 minutes for this mini simple chicken pot pie to bake in the oven to get the puff pastry browned to perfection.

This timing is appropriate for 8 oz. ramekins filled with the filling and covered with this puffed style of dough. If you used larger dishes then you may need to increase the timing by a minute or two to account for that.

If you wanted to set it and forget it for the day you could follow our Crockpot Chicken Pot Pie which cooks the filling for hours and then you can come back and cut up biscuits to make sort of dumplings inside, or serve with biscuits on the side.

Copycat KFC Chicken Pot Pie Recipe

Our easy KFC chicken pot pie recipe can use rotisserie, leftover chicken or fresh with frozen vegetables and cream of chicken soup!

Equipment

Ingredients 

  • 1 piece puff pastry, 1 sheet thawed
  • 3 medium potatoes, peeled and cubed into 1/2" pieces
  • 1/2 cup frozen vegetables
  • 1 cup chicken, rotisserie or precooked and diced
  • 1 can cream of chicken soup, 10.5 oz
  • 1 cup milk

Instructions 

  • Heat saucepan half full of water until boiling and add potatoes, boil until tender. Drain and add into a bowl. Add chicken, vegetables, milk and condensed soup and mix together.
  • Lay out your puff pastry sheet and turn a ramekin upside down and cut with a knife 1/2" larger than that (so it fully covers the top).
  • Divide the filling mixture into your 4 ramekins and preheat oven to 400F.
  • Lay each puff pastry circle on top of each ramekin and gently fold on the edges of the dish so it seals shut.
  • Place on a baking sheet and put into preheated oven for 20-22 minutes or until the top cooks and becomes golden brown. Serve immediately (will be hot).

How to Reheat a KFC Chicken Pot Pie

I mean of course you can pop it in the microwave but if you want to get the top to be a bit crispy again so it isn’t soggy, do this!! Similar to what we do with our air fryer frozen pie pie you put it in the basket after preheating to 400 for about 3-5 minutes and it will be “good as new” again.
