How to Cook a New York Strip Roast

How to cook a New York strip roast with dry rub in the oven. Cook to medium rare for tender, moist beef sliced for a healthy dinner. If you loved our Melt in the Mouth Roast Beef recipe, this will become a family favorite meal too.

What cut of meat is a strip roast?

This variety is a cut of beef that comes from the short loin section of the cow. This is the same area from which strip steaks are cut. The strip roast is essentially a larger, uncut version of the steak, making it an excellent choice for roasting whole and slicing thin when done.

New York Strip Roast Recipe

There are a few things to remember when cooking a large cut of beef in the oven; seasonings are important and I love a dry rub if you really want bold flavors, take out of the fridge 30-60 minutes before baking, start with a high temperature and then lower it for a longer period to keep it super tender, and always allow it to rest before slicing.

Ingredients

  • 1.5-2 lbs New York strip roast
  • Olive oil
  • Salt and pepper
  • Garlic powder
  • Cumin
  • Smoked paprika
  • Chili powder
  • Montreal steak seasoning

How to Cook New York Strip Roast in Oven

  • Preheat oven to 450 degrees F.
  • Mix together dry rub ingredients.
  • Pat outside of meat dry with paper towels.
  • Brush outside with olive oil.
  • Sprinkle dry rub on all sides to coat.
  • Heat a cast iron skillet over medium high heat. Add meat and sear/brown on all sides.
  • Place with the fat side facing up on the rack inside your roasting pan.
  • Roast for 15 minutes.
  • Reduce oven temperature to 350 degrees F.
  • Roast until the thickest part reaches 130 F for medium rare which will take about 35 minutes.
  • Remove from oven, cover with foil to keep warm and let it rest for 10 minutes.
  • Slice against the grain thin and serve.

I like to make a batch of our Cowboy Butter Recipe so I can put a dollop on top when done or a few minutes before done to melt all over and stay moist.

This is a lot quicker than How to Cook Cross Rib Roast since that is much thicker. If you need a cut done in about 1 hour this is a great one to choose.

How long do you cook a roast in the oven at 350?

That depends on the weight, cut, thickness and preference but you’ll need a minimum of 60 minutes or so for thinner cuts to get it done. Since this is beef you do want to leave the insides pink at least a little bit so it stays juicy and tender. Timing will vary depending on the size and desired “doneness” so I would have a meat thermometer handy to check along the way.

Chuck Roast in Oven at 350 is similar, but about 30 minutes longer since most pieces are wider and have a higher fat content. Since every single piece is going to be a bit different it is really important to have the following temperatures on hand so it is perfect for your family.

Ideal Internal Beef Roast Temperature

  • Rare: 120°F to 125°F (49°C to 52°C)
  • Medium-Rare: 130°F to 135°F or 54°C to 57°C
  • Medium: 140°F to 145°F (60°C to 63°C)
  • Medium-Well: 150°F to 155°F or 66°C to 68°C
  • Well-Done: 160°F and above (71°C and above)

Most of the time you will be using a fresh cut or at least defrosted and keeping it pink at medium rare is the best of them all if you ask me, that is what we always aim for. You can bake a Frozen Roast in the Oven though too if you have had a forgetful moment.

Do you put oil on meat before a dry rub?

No it is not necessary but many will do it that way. If you are going to sear it in a skillet first to lock in the juices I would recommend a bit of oil on your Roast with dry rub. It will lock them on the protein so it doesn’t fall off as easily. You want every speck on there let me tell you.

Do you have to sear a roast before baking in the oven?

No, that step is optional but many people swear by it. There are two reasons you may want to spend the extra few minutes doing this; it can lock in the juices better, create a crisp sear on the outside and if adding a dry rub it will fall off less if browned on all sides before baking.

What can you make with leftover roast?

If you do have leftovers you can warm to enjoy or dice and make a Steak Pot Pie Recipe with it. Many times I will make something totally new like this and my family never even knows that they are eating a “leftover meal” of sorts. I hate to waste food so I like to have options. #2 is dicing it up and adding it into chili for the next day’s meal.

Roast Dry Rub

Instructions

  • Preheat oven to 450 degrees F. Mix together dry rub listed above, or use our Pot Roast Seasoning Recipe. Pat outside of roast dry with paper towels. Brush outsides with olive oil. Sprinkle dry rub on all sides to coat.
  • * Optional but suggested * Heat a cast iron skillet over medium high heat. Add meat and sear/brown on all sides. Then continue…..
  • Place roast with the fat side facing up on the rack inside your roasting pan. Roast meat for just 15 minutes at this temperature. Reduce oven temperature to 350 degrees F at this point.
  • Roast meat until the thickest part reaches 130 F for medium rare which will take about 35 minutes. For a medium cook it will be 140 F – about 40 minutes.
  • Remove from oven, cover with foil to keep warm and let it rest for 10 minutes before slicing at an angle and serving.
