Cheesy hamburger and rice casserole recipe that is easy to throw together. With a Mexican ground beef flare and tons of flavor even kids will love this.

Instructions
Make 1-1.5 cups rice + water to make it tender first so it is ready to be incorporated once the meat is no longer pink on the outside.
In a large saucepan on the stovetop add olive oil, diced onion and ground beef. Cook until there is just a little bit of pink left on meat.
Add all other ingredients EXCEPT the cheese and sour cream. Cook for about 2 minutes and stir together.
Then fold in 1 c of cheese (and sour cream if you want it creamy). Spray 9x13" casserole dish with non stick spray and dump casserole mix inside. Smooth so it is even in pan. Sprinkle remaining cheese on top.
Put into preheated oven at 350 degrees F for 10 min. just so cheese melts and middle is warmed.
