When done immediately submerge them into a bowl of ice water for 5 minutes until cooled, then remove shells. Dry outsides with paper towels, slice in half lengthwise with a sharp knife and remove yolks into a bowl, set aside.
Heat a pot half filled with oil (or enough for these to be submerged) over medium high heat until it reaches 350 degrees F.
In one bowl add flour, in another whisk 2 eggs, in 3rd put in Panko breadcrumbs.
One at a time submerge into the flour to coat outside, then into the egg, lift up to allow excess to fall off, then into the Panko to coat all sides well. Set on a plate until all are coated well.
Fried eggs - When oil is hot enough, gently lower down each one and fry for about 3 minutes or until it is golden brown and crispy all over. Use a slotted spoon to remove and place on several paper towels to absorb excess oil.
Air fried deviled eggs - Preheat to 400 F. for 5 minutes. Set in a single layer, spray tops lightly with oil and cook for 3 minutes, flip to other side, spray again, and cook an additional 3-4 minutes until golden brown all over.
Filling - Use the back of a fork to smash yolks in bowl, add mayo mustard and vinegar, it should be wet and thick like a thin paste. Taste, adjust flavor to your liking. Spoon into a pastry bag or freezer bag, snip off end and fill middle of fried eggs to make deviled. Sprinkle tops with paprika, diced parsley or dill.
