Rinse and place shrimp in a 8" x 8" casserole dish. Drizzle the lemon juice and olive oil over the shrimp. Stir to coat completely. Sprinkle on the garlic, oregano, paprika, salt and pepper.
Stir to coat all pieces. Refrigerate for at least 2 hours to allow seafood to marinate for best results. Bake in a preheated oven at 350 degrees F for 12-15 minutes.
Use spiralizer to cut zucchini into noodles shapes. Set aside and boil a pot full of salted water until it reaches a rolling boil.
Boil spiralized zucchini noodles separately to al dente and set on a few paper towels to absorb moisture. Put into a bowl and fold together with shrimp so everything is coated with sauce.
