Preheat toaster oven to 375 degrees F for 5 minutes.
Blot outside of fillet with paper towels to dry. Brush on olive oil and sprinkle with seasonings of choice. Wrap toaster oven try with non stick aluminum foil and lay fillet on top with skin side down.
Slide into toaster oven on bottom rack and bake for 12-15 minutes or until thickest part reaches 145 degrees F, flaky with a fork.
