Instant Pot Pad Thai Recipe

olive oil

minced garlic

soy sauce

pad thai sauce

rice noodles

carrots
slivers, small sticks

red pepper
diced or thin slices

green onions

cilantro

Instructions
Add olive oil to pot and set to saute. Add chicken breast cubes and cook just until outsides are no longer pink. Then turn pot off.
Pour in soy sauce, garlic, pad thai sauce and water or broth. Stir everything together.
Place wad of uncooked rice noodles on top of everything and leave it there.
Close lid and steam valve. Set to high pressure for 2 minutes followed by a quick release.
Lift lid and use tongs to stir everything together. Add carrot sticks and red peppers. Place lid on and allow to steam those for 5 more minutes.
Serve with diced green onions and cilantro on top.
