Instructions
Boil potatoes until soft, drain and mash...or use leftover mashed potatoes. Start a skillet with Olive oil in it heating over medium low heat.
Stir the egg, cheese, bacon and green onion into the mashed potato. Stir in the bread crumbs and season with a pinch of salt & pepper. Lay out a piece of wax paper or parchment.
Shape mashed potato mixture into 3-4 inch patties. Place in the skillet and cook until browned and crispy, flip. Continue cooking about 5 minutes.
