Instructions
Grate your cheese, take our your refrigerated pie crust to soften a bit so it is easier to form into the pan, and microwave your frozen spinach as directed on the back of the box. Preheat your oven to 375 degrees.
Mix all the ingredients together in a bowl (you can add 1 cup sliced mushrooms and/or 1/4 cup bacon bits too if you'd like).
Spray non stick spray in your pie pan, put the pie crust in your pan and press in. I like to par bake the crust by itself for 4-5 minutes first so it isn't as wet on the bottom when done. (can be skipped if necessary).
Pour spinach mixture into your pie crust.
Bake at 375 for about 23-25 minutes or until the top is golden brown and slightly firm in the middle so you know the eggs are cooked.
Let cool for 10 minutes to solidify. Then cut to serve.

With Tater Tot Crust
Bake tater tots on a baking sheet in preheated oven for 10 minutes at 425 degrees.
Remove and pour into your pie pan that has been sprayed with non stick spray.
Use the back of a spoon to press warmed tater tots into bottom and sides of pie pan. Make sure it is evenly distributed and same thickness all the way around. Then make quiche filling, pour in and follow baking time and temp directions above to complete
