Cornbread Sloppy Joe Casserole

- 1 8x8 pan or make thinner cornbread topping in 9x13 pan
- 1 pan
- 1 Bowl
Ingredients
- 1 tbsp olive oil
- 1 lb ground beef
- 1/2 onion diced, optional
- 1/2 bell pepper diced, any colors, optional
- 3/4-1 c ketchup
- 1/4 c mustard
- 2 tbsp brown sugar
- 1 box Jiffy corn muffin mix plus ingredients to make the batter directed on back of box
Instructions
- Brown the ground beef, diced onions and bell peppers in a pan on the stove with olive oil until meat is no longer pink. Add your ketchup, brown sugar, and mustard.
- Stir in well until combined (taste now and add more of this or that ingredient to make it the taste you desire). Spray an 8x8" pan with non stick spray and spoon in meat mixture.
- Use a separate bowl to make the Jiffy cornbread mix as directed on the box. Pour cornbread mixture on top of meat in pan.
- Put into preheated oven at 400 degrees and follow same timing on back of box to bake, about 15 - 18 minutes or until browned on top and cooked all the way thru.
- If you wanted to melt cheese on top, sprinkle on 3 minutes before bake time is up.
