Rinse zucchini, cut off ends and discard. Leave the skin on. Use a spiralizer to make long pieces of pasta shaped pieces.
Bring a large pot of water to a rolling boil, add salt and zucchini noodles. Allow to boil for 1-2 minutes max until al dente but softened.
Use tongs to remove and place on a plate with a few paper towels on it to absorb the water. Serve tossed with spaghetti sauce for pasta, with shrimp on top, or just alone as a low carb side dish.
