Spray the inside of your slow cooker with non stick spray. Heat a pan over medium high heat and add your ground sausage, brown until there is no pink left.
Pour contents of both Rotel cans into slow cooker on the bottom. Slice velveeta and then cut slices into 4ths, add those on top.
Pour browned sausage over the top of everything and close the lid. Cook on low for 1 hour and then stir contents together. Put lid bacon on for another 20 minutes and contents will be warmed. Switch to warm setting for up to an hour, then turn off and keep lid on to keep warm beyond that for serving.
