For either method you need to use soaked peas. Rinse out of bag, pour into a bowl covered with water + 2" above them. Sit on countertop overnight. In morning drain, rinse and continue....
Put everything into crockpot except rice (ham hocks in center) cover and cook on low for 7-8 hours or until as tender as you'd like.
30 minutes before it finishes make rice in pressure cooker, rice maker or on stovetop. Remove ham hocks and remove meat from bones, add back into the pot.
Fold in cooked rice before serving.

Adding Ham Hocks
If you want to add these you would want to use soaked (from dry) beans because they take some time to soften the meat enough to fall off of the bone easily. Set inside the pot in the center before you add everything else and follow directions above.
