Brown the ground beef in a skillet over medium high heat, when not pink add taco seasoning and coat. Remove from heat and allow to slightly cool. Fold in sour cream if you want insides creamy.
Lay egg roll wrapper on cutting board and put 2 tbsp of meat in center with a sprinkle of cheese on top.
Fold in sides, then roll up end over the meat and to the other side. Wet end and fold up to seal shut.
Heat oil in another skillet until hot enough to fry once dropped inside. Set filled egg roll in and brown for 2 minutes, flip and fry for 2 more min. or so on other side.
