If not already done, place the pork steaks between two sheets of plastic wrap or wax paper. Use a meat mallet or the flat side of a heavy skillet to pound them until they are about 1/4 inch thick. Alternatively you can score the top vertically and horizontally with a sharp knife 1/2 of the way thru. This helps tenderize the meat.
Use 4 tbsp all purpose flour, baking powder, salt, garlic and coriander. Stir. In another bowl, mix 2 tbsp flour, egg and milk. Beat until you get a smooth batter without lumps.
Dip the cubed steak in the batter on both sides. Now coat the steak on both sides in all-purpose flour mixture. Heat the frying oil in a pan and transfer the steaks to the pan. Fry for 5-6 minutes on low heat until golden browned.
Using tongs or a spatula, carefully flip the steaks to the other side and continue to fry for another 5 minutes, covering the pan with a lid. Check to ensure the thickest part has reached 145 degrees to be safe to eat.
Transfer the fried cube steaks to a napkin to absorb excess oil. Then serve whole or cut into slices.
