Follow your recipe's temperature and timing. Wait until it's has been baking for at least 80% of the recommended time before ever opening the oven to check. Baking times can vary depending on the recipe, so refer to your specific instructions.
With a toothpick - Take a clean toothpick and insert it into the center, making sure to go all the way down to the bottom. Slowly withdraw it, you want it to come out mostly clean but still with a few moist crumbs attached, NOT dry.
If the toothpick comes out with wet batter on it, it needs more time in the oven. Place it back in the oven for a few minutes, then repeat the toothpick test again.
Without a toothpick - If you don't have a knife, skewer or toothpick to insert you can check with your eyes and finger. If the top is light browned all the way across with just a bit of a caramelized layer on top then it is time to check with your finger.
Gently touch the very center. If it immediately springs back, take it out immediately and put on a cooling rack. If it stays down close the door and bake for a few more minutes and check the same way with your finger again until it bounces back.
Once baked - Put pan on a cooling rack for 10-15 minutes. Then gently remove and set on a cooling rack or on a plate that has 2 paper towels on the bottom to absorb the steam that will accumulate as it continues to cool down.
