In a skillet over medium heat, heat 2 Tablespoons of the olive oil. Once hot, add the minced garlic and cook 2 minutes. Remove from heat and allow to cool as you prepared the tomatoes.
Finely dice tomatoes and place in a medium bowl. Pour the garlic infused olive oil into the bowl, along with the balsamic vinegar, salt, pepper and basil. Stir to combine and set aside to marinate for 30 minutes.
Oven: Preheat oven to 400F. Slice baguette into 1.5" slices. Brush both sides of each slice with olive oil and place on an ungreased baking sheet.
Bake for 5 minutes, then flip and bake for another 4-7 minutes until golden brown. Top the baguette slices with the tomato mixture and then garnish with parmesan or mozzarella cheese, as desired.
Air fryer: Preheat air fryer to 400 degrees F for 5 minutes. Brush olive oil on both sides of your bread slices and lay inside in one single layer. Close drawer and cook for 1 minute or until as browned as you'd like them to be.

Air Fryer Bruschetta
Follow same directions above but preheat air fryer to 400 degrees F for 5 minutes. Lay slices with olive oil inside for 1-1.5 minutes or until golden brown to your liking. Top as you wish.
